I booked a place in Greece through airbnb and the host asked me for id numbers for some tax reasons,
is it safe to give my ID and is it ok for the host to ask for it?

I have never been requested by any airbnb host to provide ID. Dont send them anything and look for a different apartment. Why would they possibly need your tax id for you to stay there? As mentioned airbnb do the id checks and not the hosts.
I am always asked to provide my passport on arrival for the records of a properly registered accommodation (with the Greek tourism authority). As per this topic

You must have stumbled upon one of the few airbnb owners that are honest and do pay taxes by actually declaring their Airbnb income to the Greek tax office.

We stayed in an Airbnb near Volos last year and were asked to complete a form with our details including passport numbers. Just like registering on arrival in a hotel. I wouldn’t worry about being asked in advance, as stated above be grateful to have found an honest owner who declares the income!
New law. They have to declare the income. The tax authorities will get the resrvations from AirBnB and will crosscheck.
