Would you? Is there plenty for us to see (definitely not museums or galleries or churches!)? If we make the trip, it will be late June.
Seems to me the only attractions left if you rule out all the museums, galleries and churches would be the North Sea Aquarium and (if you think this is an attraction, which I don't) the casino.
Where would you be starting from?
Are you coming by car on the ferry from Ramsgate, or by Eurostar from London, or somewhere in Belgium or France.
If you are starting out from the UK, then Ostend is a long way to come for just a day. I think it is definitely worth at least an overnight stay.
If you do not like museums, galleries and churches, then one of the main attractions is the beach. That does depend on the weather.
You might enjoy a trip on the Coastal Tram as well. If you go eastwards from Ostend towards Bredene Aan Zee, De Haan and Wenduine, you could get off at one of the quieter stops and go for a walk among the sand dunes by the coast.
