There are direct Brugge-Paris Thalys trains at 06:25 Mon-Sat - except Weds - 18:02 on Sat and 17:02 on Weds and Sun; so on Sat 4 May you can take either the early morning or late afternoon train if you want to avoid having to change. At all other times you simply take a local train to Bruxelles-Midi and Thalys (coming from Amsterdam) from there: both are at least twice-hourly so you have plenty of choice.
You can book on www.b-europe.com/Travel (for through ticket, irrespective of whether this is on direct Thalys or changing in Brussels, enter Brugge as departure station and Paris-Nord as arrival station). However, you have left it much too late to get best prices on Thalys, which requires booking up to 3 months in advance.
