You have to choose Delft, not Delft Zuid.
Since Delft is in the Netherlands, the Belgian rail website will most probably not be able to give you a price indication because Delft isn't a major station (unlike Amsterdam or Rotterdam). You can however buy a ticket from Brugge to Delft. No need to buy a separate ticket in Rotterdam.

First of all, there is no such thing as a dumb question.
When it states 12€ return, that is the total amount of the fare indeed.
In Belgium seniors (which is +65 and not +60 as in many countries) can travel for 4€ return (roundtrip) per person after 9:01 a.m. 4€ for one person, 8€ for 2 persons, etc.
Regarding the weekend ticket cheaper than 30€, depends on where you want to travel. A weekend return from Brugge to Antwerp, for instance, will only cost 13.40€ roundtrip per person.

If this is from Brugge to Delft, I don't think the trains will be crowded. If you were going in the direction of the Belgian coast, they might be but not inland.
That is good. I read a post in Fodor's that a atm card only
cannot be used in Belgium. It has to be a bank/debit card.
Do you know if this is true? We have never had trouble using
our atm card.

that can help getting the luggage onto the trains?
I don't know if porters still exist in Belgium. I'm afraid not, to be honest.
About ATM cards. I don't know what you mean by 'an atm card only'. Credit cards such as Visa, Mastercard, Diners, Amex, ... are widely accepted in Belgium. They can also be used for withdrawing cash from ATM machines. This 'atm card only' that you're talking about must be something different.
