Please help jog my memory.

In 1993 I took a tour of a tiny brewery in Brussels where they made "gueze" (pardon the spelling). The hot wort was left to cool off in a large, shallow, open copper tub in what seemed like a belfry. Does such a place still exist?

Sounds like the Cantillon brewery, also known as the Musée de la Gueuze, and yes it's still operating, www.cantillon.be.

they also do this on a far mnore industrial scale at the belle vue brewery and you can do tours.

I liked it a lot you could get into the Maceration of the Shaerbeek chaerries and grawl through the barrels kind of fun.
