ItaliaRail is not the web site of the Italian railways. It is an agency that does not list all the trains.
If you go to the actual Italian railways site - www.trenitalia.com/homepage_en.html - you will see these trains. However, it is unlikely you will be able to book through this web site, as it is renowned for not accepting Australian credit cards. Have a look on the Train Travel Forum, someone on there may know.
I used to travel by couchette with some frequency.
I never knew of a way to lock baggage.
I also never had anything stolen and never knew anybody else who had anything stolen.
I also don't remember sleeping all that much in a couchette.

That is an 11 hour trip. You can go to Rail Europe and check which train goes there. Rail Europe can be more or less expensive at times. So, check the pricing.

I am leaving from Firenze S. M. Novella - which I assume is the main train station in Florence... and I will be in Florence a couple days prior to my departure...
