Reservations in November?

I will be visiting Tuscan hill towns for five days the first week in November. I'm usually a study-TA-exhaustively-and-have-all-hotel-reservations-made kinda traveler. But I'm thinking about having a general idea of where I want to go in Tuscany and then just seeing where I end up every day. I really don't want to be locked into a schedule. Will I have any trouble just showing up somewhere and booking accommodations? It will include a weekend.

There'll be plenty of available accommodation in November. The issue is not availability, but finding it. You'll save a huge amount of time if you plan your itinerary in advance, including possible accommodations that you could phone when you're in the area.

If it were me, I think I would pre-book. 1st November is Tutti Santi (All Saints) a big public holiday here and it falls on a Friday this year so that weekend is going to be very busy, especially if the weather is fine. But after Tutti Santi, quite a lot of smaller agris / hotels actually close as it's a pretty quiet period for tourists from then until immediately after Christmas and it often doesn't make sense for small places to remain open / keep the heating on, etc. so your options will be reduced.
