Best way to experience real Balsamico?

Gonna visit Modena for a day with some friends and family and was wondering if anyone had any suggestions for us. We would like to taste the best Balsamico possible. Maybe a producer we can visit and a few restaurant options?

It's hard to judge which balsamic is the best. You can start booking a visit through the consorzio and then experience a couple of very good restaurants (Osteria Francescana, Osteria Giusti, Strada Facendo or Zelmira). Out of Modena, Ca` Matilde in Quattro Castella.

We visited Acetaia di Giorgio in Mondena in 2009 and it was great. Family run for about 150 years, they produce traditional balsamic vinegar. They hosts were wonderful and gave us a tour and explanation of how it's done, introduced us to the "mother" barrel and all of her "daughters." They sell 12+ and 25+ year old balsamic and it's terrific. We had 3 bottles shipped home and are still enjoying it.

We were staying in Bologna and took the train to Modena. We got a taxi at the station and it was a short trip to the acetaia. You can book a tour/tasting on line. http://www.acetaiadigiorgio.it/ Click on ENGLISH at the top right of the page.
