Here in Naples they've tried to fix that "it's Monday and nothing's open" problem by arranging for the museum and site closing days to be staggered. Not a full list, but some to watch out for...
A few that HAVE stuck to Mondays:
* Baia - museum in the castle, and the archaeological area (Baia, near Pozzuoli)
* Galleria di Palazzo Zevallos di stigliano (Naples)
* Stazione Zoologica (Mergellina)
* Paestum (the museum, not the site) - 1st and 3rd Mondays of the month

Many others (in Naples unless indicated) are open then, and close as follows:
- Tuesdays:
* Cappella Sansevero
* Castel Sant'Elmo, and the Museo del Novecento
* Flavian amphitheatre (Pozzuoli)
* MADRE (Museum of Contemporary Art, Donna Regina) and the Museo Diocesano
* National Archaeological Museum
* PAN (Palazzo delle Arti di Napoli)
* Villa Pignatelli, the Museo Diego Aragona Pignatelli Cortes (Mergellina/Chiaia)
* Villa Floridia, for the ceramics collection of the Museo Duca di Martina (Vomero)
* Vanvitelli's Reggia, the Royal Palace (Caserta)
