Well, generally, shops are closed in Germany on Sunday. Rüdesheim's souvenir stores are an exception. RÜD can be quite crowded with visitors on Sunday, it makes for a popular outing and is the best place to start a Rhine cruise. You can reach it by train from Mainz via Wiesbaden.
When will you be here? The next two weekends the annual wine festival takes place at Mainz' Stadtpark, a most wonderful event. But also on a "usual" Sunday Mainz is very enjoyable and the river promenade quite lively actually.
On Sundays you can do everything a visitor would do, with one single exception, namely shopping. A city the size of Mainz will never be sleepy.

For real, if you come this weekend, Frankfurt is your best option. Along the river you will find 20+Stages with live music from all over the World, great local and international food, beergardens and hundreds of performances. It starts Friday and ends on Sunday with a huge Firework.
Another advantage is that you can visit the most popular Museums(some are world-class) for a nominal entrance fee of €7 all weekend long. One of the best festivals in Europe
