During the Christmas season are shops & open in Nuremberg on Sundays?
No, they are usually closed. However, shops are permitted to open on a certain number of Sundays per year. That's called "verkaufsoffener Sonntag" and happens maybe 3 or 4 times a year, and chances are good that one of these times is before Christmas. You'd have to google it.
I would say that in Catholic Bavaria, the chances of having a shopping Sunday during Advent are less than probably anywhere else in Germany. Even business oriented Frankfurt, won't allow Shopping Sundays during Advent.
Spend your time at the Christmas Markets, which is what the cities want you to do.
As stated shops, with some exceptions, have to be closed on Sundays.
