when traveling from nice to montpellier, do all trains follow the coast with views of the med sea, specifically wanted to take advantage if possible

No but the trains from St Raphael to Nice do follow the shoreline.

Yes. Any train going west from Nice follows the coast towards Cannes, St raphael & Toulon before heading inland. This section is pretty scenic, rocky headlands, small marinas, millionaires' villas.

You'll probably also see the bay at Marseille, with the infamous Chateau d'If on its island in the bay (think Count of Monte Cristo)

Montpellier is on the main rail line to Barcelona, and there are a few TGV trains each day.

The dedicated TGV track is not complete and the Nimes - Montpellier - Perpignan section will not be finished for some years.

South of Perpignan the new rail line goes inland with a lot of it in tunnels.

There are still options to travel on the old line, which does go more or less along the coast as far as the border with Spain.
