I've got a list going for my son's girlfriend:

Le Grenier de Notre Dame, 18 Rue de la Bucherie, 5th

L'Arpege--84 Rue de Varenne (metro Varenne)—expensive!

Guen Mai--6 Rue Cardinale (metro Mabillon)

Breakfast in America has some veggie options: veggie wraps, veggie burgers, etc.

Le Zyriab has lots of veggie choices in their extensive appetizer section, both hot and cold, and

possibly some selections in the mains

Café Pinson--6 rue du Forez, 3rd 09 83 82 53 53, no reservations, M- Sat 10am-7pm, Sun 10- 6 pm

(vegetarian and gluten-free)

East Side Burgers--60, boulevard Voltaire (11th) Metro Richard Lenoir or St. Ambroise. Veg. & vegan

L’As du Falafel—34 rue des Rosiers; Closed from sundown Fri til Sun lunch.

In other words, vegetarian Paris is a very very small place. Lucky for you, all of the other restaurants normally have vegetarian options if you don't mind sitting next to omnivores.

Cafe Pinson, Nanashi, Bob's Juice Bar, Merce & The Muse - all in the Marais, all outstanding, reasonable prices. All are usually crowded!
