Bordeaux is too far for a day trip. The Loir valley is not a renowned wine area, bit the Loire - with the E on the end - is. Can be confusing with two rivers with similar names. This is not so easy for a day as you would need a car.
The best option, in terms of transport is Burgundy. You can take the TGV (rapid train) to Dijon from where you could take an orgained tour of the wineries. It is do-able in a day but if you can possibly incorporate an overnight stay you will get a lot more out of this trip.
