We are planning to go to Bath from London by train, spend the night there, then visit Lacock the following day. Just wondering what is the best way to do so? Also... do we have to go back to Bath to catch the train back to London?

Lacock, although not far from Bath, can be difficult to get to via public transportation. You might consider taking one of the Mad Max tours from Bath that visit Lacock. Many people recommend them. http://www.madmaxtours.co.uk/ You could catch a train back to London after you return to Bath.
Difficult, but not impossible. Train from Bath to Chippenham and Faresaver X34 bus from Chippenham to Lacock. While the bus and train journeys are only about 12 minutes each, total time with connections would be up to 50 minutes.
Obviously, you could return to London by train from Chippenham but, in that case, you'ld have to have your luggage with you the whole time.

Hi there
You could always consider taking a cab from Chippenham railway station to Lacock. I don't know what the fare would be, but it's only 3.5 miles and would take a maximum of 10 minutes. You could ask the driver to come back for you at a certain time, and go directly back to the station at Chippenham. There are always cabs waiting for a fare at Chippenham whenever a train is due in.
