There are two trains from LGW to Victoria: the Gatwick Express is a dedicated service, running to and from the airport with no stops en route; trains run four times an hour, with a single (one way) fare of £16.90, return at £28.80.
Southern services run frequently from the airport to Victoria as well, but may stop a few times before arriving in London. Single fare is £10.90, return £21.80.
There is a catch. The Southern trains are part of the commuter rail services, and if you're travelling in to the city before about 0930 on a weekday or out from London after 1630 on a weekday, the trains could be chockablock full; you may not fancy the idea of standing for 40 minutes clinging to your bags. Outside of peak hours, though, and at weekends, the Southern services are quite sufficient for the trip, unless you'd rather pay for the GEX.
Since you're unfamiliar with London, a taxi from Victoria to the Intercontinental would probably be a good idea in any event. The taxi rank at Victoria is well marked, and unless the weather is hideous you shouldn't have to wait long for a cab.

Regardless of the weather, the most likely time you will find a sizeablea queue for taxis at Victoria is if you arrive jst after a particularly busy Gatwick Express (another reason for using the Southern service perhaps). Even then the lne will shorten quite rapidly, cabbies like going to the station because they know they will always be able to pick up a fare.
You will find it easier to get a taxi at Victoria if after getting off the Gatwick express you go up a floor- using the lift or escalator- taxi rank is there just outside the station
But if you do not go up -instead walk right out through the main railway station (to front entrance ) you will find another rank - but it is popular and often you will have a long wait

We recently used Simply Airports, private car, http://www.simplyairports.co.uk/
to get from Heathrow to Bloomsbury, and I thought it was good service. Cost was 36 pounds for two from Heathrow, presumably from LGW might be a little less. I thought that after getting off the flight (from NC) with little sleep, and trying to work around a new place and drag the heavy baggage, that it was worth the little extra cost to have someone meet us at a specified time, handle the bags, carry us in comfort and do all the thinking.
Their service was spot on, no problems or issues of any kind. Their car was clean and comfortable, the driver was prompt, efficient and courteous.
From LGW taxi will be more.
