Autumn in Ontario

We have 5 days in late Oct/early Nov to venture out from Toronto (2-3 hrs away by car), and are looking for an area where we can hike, canoe, and also experience town amenities, such as nice restaurants, art, and perhaps stay at a B & B or vacation rental. Muskoka area has been suggested. Other suggestions (looking for authentic ambience, and not a resort type of atmosphere).

Because you'll be here in late October and early November, I'd suggest going to the far south of the province to enjoy milder weather (same latitude as Northern California) to Pelee Island.

It's a beautiful spot with hikes, wildlife (endangered species too)

and is a hot spot in Canada for birding.

There's also a great little winery as well as arts enthusiasts. It will be too late for the theatre, but you shouldn't find it hard to enjoy the area if you like the outdoors. Very quiet and definitely a non-resort atmosphere. Have a look and see what you think.
