For me it's Royal Hideaway. Amazing food and service. Very quiet and small. Great beach. Upscale and elegant. It fits what I, personally, want from a vacation.

Hmmm, "best" is pretty subjective but to start you off on your research, here's my list of all the four and five star adult only resorts from Cancun to Tulum:

For us what makes the best is small (less than 100 rooms), excellent service and food, staff that makes you feel like family, wonderful beach, fun fellow travelers, adults only, no reservations or towel cards...the resort that epitomizes that for us is the El Dorado Maroma. We have been there 4 times thus far, with a 5th coming up in April/May.

We've been to Secret Capri, Secret Silversands, and Valentin Imperial Maya that fit your criteria. All were excellent, but we like VIM the best.

Beach--VIM has a very big oceanfront. It's divided into three sections, the main beach, a beach to the south we call the quiet beach and south of that a beach with 7 palapas we call the deserted beach.

Plus and minus. of the beaches-- In the busy season people complain about not enough palapas but we have never found a problem using the quiet beach (20 palapas and it's own bar). There are a lot of rocks and coral on much of the beach but there is a roped off area in the main beach with sandy access. The sand is soft and the beaches are pretty deep. Of the three resorts we've been to, VIM has the best beach.

Food. Food is excellent at all three resorts. VIM has more restaurants (all ala carte in the evening) and will have an addition outside buffet about every third night. The have the normal restaurants you find in high end adults only resorts but they also have an Indonesian restaurant which is nice if you like spicy food.

Service. Again service tends to be excellent at these types of resorts. We have been very impressed with the service at all three and love the service we get at VIM.

Drinks. VIM has over 15 bars (not all open at the same time), so you won't go thirsty. Drinks are good and depending on the bartender you may want a little more liquor in your drinks or a little less.

Just some notes. VIM has a very large footprint so you can find yourself doing a lot of walking. It's a big resort (500 rooms) but it never feels crowded. I really love the plaza. At night they light it up and have entertainment. It's beautiful and very relaxing.

Some people have complained that they are getting a younger crowd so it get pretty loud at the main pool (huge area with two swim up bars). We actually found it louder than we liked before the younger crowd showed up so we use the pool by the swim out suites. No swim up bar, but it has it's own bar and service around the pool.

Finally the rooms are really nice and the beds are the most comfortable ones we found in Mexico.
