It really depends on where, what day, what time, and group size. If you're set on eating at a specific place, I definitely would make a reservation, but we've also just walked in to see if place was available.
Yes. January is high season, and some restaurants book up quickly. These are some good upscale restaurants for which Reservations will be necessary-
Blue Garden Brazilian

luv4travel has good advice, the top end restaurants generally need a reservation if you want to get in. Ingredients (our favourite) has an online reservation system, but it failed us twice last Feb, despite receiving online confirmations. If you book Ingredients (which I would recommend), do so in person or by phone.
