Since we have never been to Jamaica what is the preferred way to pay? Is US dollars acceptable everywhere, shall we get Traveler's checks and what about using credit cards?
We just take US funds with us and you'll need a credit card or cash deposit for the hotel's incidentals.

At most places in the tourist trade, yes. Out in the country they may or may not take US Dollars.

They can be cashed at banks and your hotel.

Fine at your hotel, otherwise I would not use it.
As you are going to an all inclusive resort you may not be spending any money. At your hotel you can pay for all of what charges there are as you leave by using a credit card.
grand_illusion...we travel with our cc's (we take 2, just in case one is compromised) and US cash. It's been a number of years since we've actually brought and used travellers checks (cashed at the resort). We calculate our requirements as much as possible in advance and bring more than enough cash to cover any tips, purchases, food and drink outside the resort and drivers.
You won't need much cash unless you are off property a lot. We have always used U.S. cash and they take it most places we go, even the Pelican Bar! Otherwise, we always use our CC's on all our travels. A CC is safe and protected. If you lose a hundred dollars cash, you will never see it again.
We just returned from SWH yesterday and are looking forward to heading back! We used U.S. cash exclusively for any purchases off the resort (airport, tips, private taxi transfer, excursion stops) and any outside vendors on property (local jewelry and wood carvers). Any tours or resort extras (Island Routes, Redline Spa, Sandals shops, flowers, beachside dining, premium wines) can be charged to your room and settled at the end of the trip by credit card.
Sandals will also provide a cash advance on your credit card for a fee (I believe 10%) as another guest had used this service. If you plan on using a credit card, call the bank before you leave to indicate your dates of foreign travel. If you do not feel comfortable carrying large amounts of cash while traveling, your traveler's checks can be cashed at the front desk as well.
