Pacific Island stops on way to and from-NZ and OZ

I have been spending hours trying to come up with an itinerary, and just had a thought that may make things easier to plan.

We want to leave in June and go to New Zealand and Australia from the States (probably LAX). Can we make a stop at one of the South Pacific Islands on the way there and another island on the way back? Islands we are interested in are Fiji, Tahiti, Cook Islands or any other islands that are beautiful and great for snorkeling. Does anyone have experience with this?

For your outbound journey, Air New Zealand has a flight LAX to RAR every Sunday night (NZ19), and then RAR to AKL flights daily. You could do Fiji on the return from SYD. For this, you'd be on Air Pacific, who does codeshare with Air New Zealand. For Tahiti and other pacific islands, it gets more difficult to stop on the way from SYD to LAX, unless you're willing to make additional connections.
