I piatti si basano su una attenta ricerca dei prodotti del territorio anche se vengono tradotti in fantasiosa cucina creativa. Le erbe aromatiche di cui lo chef pierluigi raccagni fa abbondante uso vengono coltivate in un orto biologico, le verdure sono scelte tra i produttori agricoli locali come le carni e alcuni formaggi. La focaccia ormai uno dei simboli del locale viene preparata e cotta due volte al giorno ed e frutto di una lunga serie di prove di levitazione e cottura. Tutte le paste che vengono fatte cambiano giornalmente e propongono antiche forme (cappellacci, tortelli, ravioli, lasagne, timballi, mezzelune) ma con ripieni e salse di fantasia, ideati con arte sempre diversa dallo chef. Accanto a questi piatti una selezione di formaggi e salumi italiani di varie regioni dei presidi slow food e sempre presente. Dolci fatti in casa e gelati anch' essi dei preside slow food coronano il menu. La cantina formata da una quarantina di etichette si basa su vini del territorio con qualche disgressionele birre trappiste accompagnano quelle artigianali locali.
