Our Turkish friends who joined us suggested this as a MUST in Edirne. They were correct!!!
Fresh daily calf liver is cut into thin strips, gently deep fried and lightly seasoned. As we were observing the fast we did not eat until a few hours...later. Our first pieces were eaten cool while we waited for the rest to re-heat. It was utterly delicious--perhaps the best liver I have ever eaten--both ways and re-heated perfectly.
