Whilst there are several of these "Butcher's Restaurants" in Cisternino and pretty much all of them are great, Borgo perhaps has the edge. This restaurant is heaven for meatlovers. You choose meat at the butchers and they prepare it in special grill/Owen and observe it with sides you choose. This is the best grilled meat I have ever eaten and of course the great experience. In the whole town you smell the grill. Each restaurant is placed in two, three or more houses.... More

One of the best grilled dinner I've ever tried. Excellent meat prepared to perfection. We had several kind of bombette which are a local specialty, a must try. And lever, which as well was delicious. It all combined by some veggies and good local wine. For the good price of 13 eur each. You have to go 😉

We were recommended this place by our host at the Trullo we were staying at. Fabulous recommendation, we were greeted by our fabulous waitress who spoke perfect English along with many other languages, we were shown the meat counter, talked through the options and left to choose our feast. Big table of eight and all very much enjoyed our meat in particular. The owner/waitress is very welcoming and seems to speak 10 different languages! The only downside was side orders, none were really of quality compared to the fabulous meat. Ragu di asino with orecchiette is also delicious.

I had to reconsider this place. I have finally found great steak in Italy! The trick is to ask to salt it WHILE cooking (as Italians don't seem to salt their meat) and ask it almost well done. This place is clearly popular with local families who come and look at the raw meat "bombettes" at the serving counter. They choose their menu items and return shortly afterwards to savour the food. The prices are reasonable and the mix of diners from posh dinner parties to locals just indicate how unusual and popular the place is.

You get to choose the raw meat and the restaurant will cook it for you. Everything we ordered was tasty and the quality of the meat was good, the prices are quite cheap.
