Omfg sooo good...my husband & I went to check if Caitlins Bakery had any vegan treats & at the time it was like 9 am & she did not, BUT after chatting with her she really wanted to make us happy so she said come back at 4 and I'll have something for you. So we came back and bought 6 chocolate muffins, 1 loaf banana choc chip bread and 1 loaf banana walnut bread. Plus she even threw in another banana muffin we ate right there. It was delicious! My fav were the chocolate muffins... so soft and moist but not too sweet. Perfection! And her made from scratch vegan chickpea frozen veggie burgers were very tasty too! But way beyond her baking skills I just wanted to let everyone know that Caitlin is a super solid human being. She went above & beyond to serve our vegan needs. She cares about the environment & organizes beach clean ups with local kiddos. She is a 1 woman show with a super rustic set up. No fancy cafe with Wi-Fi and all that. You will walk up to a little shack off a dirt road. Just say, Good Morning! or Hello Caitlin! as you walk on her property and she will come down from her house to serve you. It was so lovely meeting Caitlin & I know you will love her and her baked goods!

Caitlin's Bakery is unique. We decided to call her bakery 'building' the Sugar Shack! We made several trips to pick up baked goods of all kinds. What makes the bakery so enjoyable and so unique is far more than just the massive variety of delicious baked goods on offer. What makes a visit to the Sugar Shack so special is Caitlin herself. Bubbly, high-energy, engaging and compassionate are all words that apply to this slim slip of a gorgeous human. You may soon forget about the tasty muffins, carrot and banana bread loaves or the massive bagels, but you'll never forget Caitlin. A long-time resident of Hopkins, she is one of the unique fixtures in this laid-back Caribbean beach town.

Don't be fooled by the building - Caitlin is a fantastic baker. We bought muffins and rolls from her several times on our vacation. Delicious. Caitlin is high-energy and fun to chat with! Be sure to stop by.

A Hopkins local gave us a tour and we were happy we made a stop at this bakery as Caitlin had quite an interesting variety of muffins. Probably would not have found it otherwise riding bikes as it was tucked away on a side street. Track her down!

We stumbled across Caits just before we went camping in Cockscomb Jaguar Reserve. She provided us with amazing bread and cooked us some vegan burgers to heat up later which were incredible. Cait herself is also a wonderful person and we loved our convos with her. Highly recommend stopping here if you're nearby!

Cait has been around doing her baking for several years. The first time it was hard to find her place and only thanks to my "persistent" sister did we find a place to purchase good tasting bread and muffins. This year, she had signs up and she was easier to find. Her kitchen is so small and yet she produces such great baked goods. Congratulations to Caitlin to edge out a living for herself and children in such an entrepreneurial and unique way. It tastes and feels like home baking :)

Along the main road of Hopkins, I saw a small teal sign that simply said "Bakery". A short walk up a side road leads you to Caitlin's Bakery. What a treasure. Her chocolate banana muffin was moist and delicious! I wish I had room to try the beautiful loaves of bread.

We had the Banana Walnut and Chocolate bread and carrot muffins. They were delicious. Caitlin is very welcoming and we enjoyed our visit.

Picked up muffins for breakfast and they were fantastic. Caitlin was very nice and made suggestions for other places to visit in Hopkins. We will be back before we leave.

Caitlin's is definitely off the beaten path but so worth the trip. Take the main drive into Hopkins, make a right at the main street, go slowly and look for the tiny sign. The atmosphere is so quaint, homey and personal. And, oh my gosh, you can taste the love! The baked goods are all amazing and delicious. Her Chocolate Zucchini muffins are out of this world. And the bread! To die for. I would be lying if I said that anything we tasted was not top notch. So, if you are heading to Placencia, Punta Gorda or Dangriga, it is so worth the drive into Hopkins. You will not be disappointed! I promise you.

I would have never found Caitlin's Bakery on my own but thankfully the owner of the home we stayed in recommended her to us. When you are in town headed south, take a right (away from the beach) on the street (dirt street) just before the basket ball court and she is one block down on the right. You will see her green wooden shack with the window open. We bought muffins and fantastic fresh bread!! She also had brownies and other sweet treats. She has different things all the time so go with an open mind and try whatever she baked that day! You won't be disappointed. Plus, she is very informative about the area and so friendly!!

Cute little bakery in Hopkins. She bakes everything with love and respect. It tastes good too. We had carrot, vanilla and chocolate muffins.

If you go to Hopkins you have to find Caitlin's bakery. She has good bread, chocolate zucchini muffins, banana muffins, carrot muffins and brownies. And she is the sweetest person. Always has a smile on her face and a great wealth of knowledge​.

All in all it is very good. While some of the baked goods (muffins, etc) fell into the "good but not spectacular" category, the bread and rolls from Caitlin were truly great. Totally worth it to get bread to make sandwiches to take on day trips or just much on the beach. A little hard to find and you'll be convinced that you've gotten lost on your way, but worth it. And Caitlin is really friendly and nice, as well.
