The Del Charro saloon is adjacent to (and a part of) the Inn of the Governors Hotel and is a wonderful place to grab a bite or a drink (or indeed both!) while watching the world go by outside the window. We’ve stayed at the hotel a couple of times before and this was our third visit to Santa Fe. We wouldn’t stay anywhere else now and one of the reasons is the Del Charro saloon. It’s convenient (being just a few steps from the lobby), is priced well and has a good selection of bar food options and some delicious margaritas (with the smoky pineapple one and the watermelon one being my favourites!) We arrived early too early to check in and so had some time to kill. We hadn’t had breakfast yet and so wanted to grab a bite to eat before walking around beautiful Santa Fe.
We got a table & ordered a couple of drinks, and decided just to get some chicken tenders/fries to share (as were planning a nice dinner later). They came out fairly quickly & were hot & fresh, so we were happy with that. The following day we ordered some room service from the hotel (which comes from Del Charro too) and again, it was nice – we had a burger & some fish/potato chips (not fries). It’s ideal for convenience & snacky bar food, and they have some specials & regular deals (like Taco Tuesday etc) so it’s not too expensive. Bear in mind that you usually get a discount voucher if you’re staying at the hotel too, which makes it even better value!

We received a 15 dollar credit in the restaurant each day for reserving our room directly with the hotel but even without this discount the food was reasonable and high quality. Most of the credit went to the margaritas which come with the shaker and almost another serving inside. Queso dipmwas wonderful, not all whiz like in other places. Blue corn enchiladas were great.
Breakfast was included and very substantial. Sublime blueberry scones and cinnamon rolls

We stopped in for a late lunch, having read about their weekend specials. We ordered the carne asada tacos ($14) and the pork belly tacos ($10) to share. Each came with rice and black beans. Both tacos were quite delicious. The pork belly had a pineapple slaw and the flavors was reminiscent of chiccharones. The carne asada was tender and juicy. Service was attentive and friendly.

Long wait for service despite there being almost no one in the dining area but the IPA was cold and good and margarita was reported as 'excellent' by dining companion when they finally arrived. And that was as good as it got! The 'special', red chili hamburger, was through-and-through filled with connective tissues only slightly ground into 'hamburger' and the side of coleslaw was almost tasteless although appearing freshly made. The red chili sauce was good. Dining companion asked wait person to exchange the obviously damaged sliced avocado topping her salad, said wait person opined there was nothing wrong with the avocado and walked away. At that point we should have also walked away. It'll be a long interval until we retry Del Charro.

They have only been open at 50% capacity for 2 weeks and are doing great. We went on a Monday night during spring break. Service was very good, drinks good, food good. Seems like the menu is smaller (.to be expected right now). We waited about 30 minutes for a table and by the time we ordered drinks, then food, it was another 45 minutes. The food was hot and served straight from someone out of the kitchen. We had chicken enchiladas and the pablano. Both said “spicy” but they didn’t have much heat- just enough for the average Joe. Every dining experience has been this way-restaurants don’t have the staff or space they’re used to. They are doing their very best and I appreciate them serving us. Just be patient and know it’s worth the wait ( almost everywhere does to-go orders so make that an option if you need to!) * Also, masks are still required, they take your temperature and ask you to sign the contact tracing form before you’re seated. All are state mandated.

This Saloon is a fun spot to watch people. The bar area has TVs where we watched the Liberty Bowl match with my hometown US Naval Academy beat Kansas! I had the burger with green chilis and I have to say it’s top 5 of all the burgers I’ve eaten and I’ve eaten a lot. Staff was very friendly.

We have always loved this restaurant when coming to Santa Fe, and we particularly appreciated them during this Covid-19 time. You could go online and order, and know exactly where and when to get the pickup. It worked perfectly and the food was FANTASTIC!!!!

Went here based upon a recommendation from our hotel. Wait was 45 min at 8pm. Got seated to a rather disappointing (for us) menu. We had the quesadilla and the chicken enchilada. Neither were good at all. Dry and not tasty. Perhaps the inexpensive pricing (bill was $25 with chips and salsa) drives the business here? I would NOT go back.

Our first experience, dinner, was less than impressive. We understood this place had “one of the best burgers in Santa Fe” and ordered the Del Charro burger, medium rare. This was obviously NOT the burger talked about! It was overcooked and nothing special at all. Very disappointed.
However our next 2 experiences raised the rating! Our 2nd evening we went to the bar after having dined elsewhere. The Appletini was one of the best I’ve had anywhere and the shaker was left for me, with about another 1/2 drink left, all for only $9! I then asked for a glass of the cream sherry served here as a welcome gift to hotel guests to bring back to our room and received a very generous pour.
The 3rd experience was the complimentary cooked to order breakfast on our last morning. We split the 3-egg omelet with toast and bacon and it was PERFECT!!

We attended a function during dinner hours, so Del Charro was only one of a handful of restaurants serving food after 9 p.m. in historic downtown Santa Fe.
A typical bar scene with an annex room, where we were seated. Very loud. Service was good considering how crowded the restaurant was and the fact they were low on staff. Food was good, considering what type of establishment this is. We just had appetizers.

Nice spot, Upon entering you think you are in a sports bar, and expectation is the food will follow along. However, the food is definitely a big upgrade from what you would expect. The menu was fairly extensive, so regardless of what you want to eat, they can take care of you. Even if you need gluten free, they have GF buns for sandwiches. You will have to wait in the evening.

We ate here twice on our last trip to Santa Fe because not a ton of places were open or had seating. The first time as a couple and the second time with some friends. We had seven in our party so we had to split up because they couldn’t seat more than six people at a table. The tables were very far apart and we were outside in a giant tent. The staff was friendly and the margaritas were great. I ordered the regular margarita on my second visit and preferred it over the flavored ones. The portions were very large and prices reasonable.

We've walked by this place for years, but didn't stop in until our condo manager suggested it. We found a very noisy bar, and a much quieter dining room just behind it. The short menu seemed to be mostly "bar food" - burgers, sandwiches, appetizers and a couple of salads. My tortilla club was a tasty, tight wrap of turkey, lettuce, cheese, tomato and crunchy bacon. My wife's burger was very, very good, with rich beef flavor and just the right amount of crispy edges. We would return.

Once we got seated, we loved it - not surprising that it took some persistence to get a seat at 5:30 PM on an August Saturday. Best Margaritas I've had in Santa Fe. Great tuna and enchiladas. Don't leave without ordering the chocolate mousse. We will return.

Great atmosphere to have a meal. We came on a cold wet evening and the fireplace was very nice.
I had the Chile plobano which in my opinion needs work. There was a very thick breading which dominated every bite, so I cut the top off. It could use a bit more meat inside. It was an ample portion and the flavors were great.
