Revel is hands down the best restaurant in Silver and holds its own among the great fine dining establishments in the state, including Santa Fe and Taos. In particular, their specialty is taking standard restaurant fare like burgers and pizza and raising the bar on...what to expect.
We got take-out here two nights in a row during a recent visit. The first night we got a Gila Burger (a green-chile cheeseburger) with fries and the orecchiette con carciofo. The pasta was solid, but the burger was a revelation (no pun intended). It's a normal sized probably 6 oz. thickburger. The ground beef was packed a little too tight, but the patty had a salty, savory crust that gave the burger an iridescent flavor. The green chile featured an otherworldly smokiness, a taste that suggested that it had been roasted over wood rather than gas. And the sharp cheddar had melted into a slurry that had melded with the chile. The only miss was the lettuce, which came wilted from the heat of the burger. (It should have been left on the side in a to-go order.) Oh yeah, and the fries. After 6 months of to-go fries, this is the first batch that didn't need a refresh in the toaster oven. They still had a crispy shatter, and just the right amount of salt (and pepper, too). They appear to be house-made, and not off of the Cisco truck. A glob of cheese and chile had fallen on a few of the fries, and that mouthful suggested that the chile cheese fries would definitely be worth ordering.
The next night we got fish and chips and the crustacean pizza. The fish and chips were the only disappointment, in that the fish didn't really rise above normal restaurant fish and chips fish--just cod with a straightforward batter. The slaw was serviceable, and the tartar sauce home-made. And it came with those amazing fries. The pizza, on the other hand, was pretty fantastic. A doughy crust, about as crisp as you can get in a gas oven. And the toppings were extravagant. We devoured the fish and chips first, because they don't keep, and only had a couple of slices of the pizza that night. We reheated the pizza in the oven (10 minutes at 350 degrees) for lunch the next day, and it remained delicious.More
