Can't beat this winter lunch special *Tuesday thru Friday thru mid-March) which includes an appetizer/soup/or salad, entree, and dessert for $19. Our meal was outstanding and as it was the middle of the week on a cold, grey day, the restaurant was underutilized which gave us an opportunity to interact more with our student servers. So interesting to see where they have come from and what their end goals are. Hubby and I each had a liver pate appetizer, I had duck breast with black barley and roasted vegetables and he had salmon. I chose the ginger panna cotta for dessert and he had the key lime pie with gelato. What a wonderful meal in a very relaxing setting. We drive 90 miles each way but mid-week did not encounter traffic midday! Bought some bread to take home from the Apple Pie Bakery and always enjoy growing in the campus bookstore. Our favorite restaurant, The Caterina de'Medici will not open for lunch until January 27. Will have to take advantage of the special when it does!

This iconic gem on the campus of the Culinary Institue of America offers all the great elements of a fine dining experience. Take your time and savor delights from all portions of the menu. Presented by the students, who compose the kitchen and front of the house staff, reserve your table weeks, if not months in advance, well worth the effort.

Great dinner! My brother is a CIA grad, and this was my first time back since his graduation. Gorgeous campus, and had some time before dinner to walk through the grounds and school. First off, the bread may be THE BEST bread I’ve ever eaten. I then chose 4 starters instead of a starter and a main course - all AMAZING. My friend had a salad and pork porterhouse, then we split a dessert (profiteroles). No gratuity allowed legally, but a 20% fee added to the bill for school education fund. They also provide a small Brown bag to keep your mask in during dining - nice touch… it’s this attention to detail that makes this dining an experience and not just a meal.

The food and service was excellent. The pace of the delivery of the meal was perfect, we did not have to wait too long for anything while also not being rushed. Important to know that the portion sizes are designed for a multi course meal (appetizer, main entree, dessert, etc). If you just order the main entree you will still be hungry. I ordered the scallops with pork bellies which consisted of just a few small scallops and a piece of pork about the size of my thumb. I ended up ordering dessert because I was still hungry. The cost also seemed excessive. I am glad we tried it once but we would not go back.

AB is one of the Culinary Institute of America restaurants and provides a practical front of the house experience for students. The service was a little uneven, too much or too little, but hey, it is essentially a training venue. Food was excellent, as one would expect, although portions were a little skimpy, and it was nice that it was essentially all locally sourced including the wine. Looking forward to trying the other two offerings, French and Italian (although Italian still closed as of early July) on my next trip. Make your reservations early.

Be Prepared to be wowed in every respect by these students and future great chefs ! We had the most incredible meal here starting with a wonderfully creative Gin cocktail and then we split three appetizers.. shrimp and grits, soft shell crab and crab cakes. They were all superb and the accompanying vegetables were certainly freshly farmed. Speaking of fresh the rolls with butter and lightly salted was just stunning. For entrees we had the rack of lamb that was plated out of a food magazine and the half chicken that was so moist and beautifully plated as well. Even the deserts shared like the profiteroles with coffee ice cream and bread pudding were just fantastic. It is so much fun to be served by students eager to please and learn and the open kitchen is spectacular to watch. Being on the campus and spending time in the restaurant is much more like an entire new exciting experience instead of just having another fine dinner.

Overall it’s a nice experience. Great service by all. We had the mac n cheese app - grainy. My mushroom ravioli app was enjoyable but not memorable. I ordered the lobster pot pie- more of a light stew in a puff pastry. My husband got the lamb. He really enjoyed it. The table bread and butter was a wonderful start. They charge some type of student enrichment fee of 20 percent. Tipping is not allowed so I imagine that fee is compensation for service. You could see the students working hard throughout the dining room. Give it a try at least once.

This is surely one of the world’s greatest destination restaurants. Here students from what may be the world’s best cooking school prepare gourmet meals under the strict supervision of top chefs. This is a farm-to-table experience, so the edible products of the Hudson Valley are featured. The chefs who design the offerings are nothing less than brilliant and the students prepare everything perfectly. Prices are about what one expects at a good, local, white tablecloth restaurant, but the food is more than good. It’s amazing. Be prepared for some adventurous eating and lingering food fantasies. That being said, this is a cooking school, and the student wait staff are being evaluated for their service, so there is a nervous atmosphere in the dining room. Although there are vegetarian and even vegan options, this is really a place for the omnivorous. I use a wheelchair and had no difficulties going from the parking garage to the dining room. In one of the schools corridors, near the restaurant, there is a truly accessible women’s restroom. I can’t speak for the men’s. Near the restaurant is a shop with a carefully curated selection of cookbooks, merch, and small kitchen gadgets. There is also a café that sells baked goods to take home with you. Go there and make your purchases before your meal. Afterwards they may be sold out.

For those of you who love the art of cooking, you will thoroughly enjoy the whole experience, I think, of eating here. I enjoy eating, but I am not an adventurous eater. But I knew my wife would probably be thrilled with the opportunity to go here. So I took my chances. She loved the whole thing! I thought the bread and dessert were the best parts of my meal, but the safe roasted chicken I chose was certainly a good dinner. Students serve under the watchful eye of faculty. We enjoyed interacting and learning about the processes used to make good food fine dining. Many thanks for a nice evening!

Unlike the Caterina de’ Medici and the Bocuse, this one was a great disappointment. We had reservations at 7:00 P. M. But, they took us at 6:30 P. M. That was the only fast thing that occurred during our dinner. The food was mediocre at best. The flavors were flat to the palate. The service, it was really painfully slow. There was no cohesive coordination between the kitchen and the staff. Even though the person that served us, as well as the staff we encountered, were really nice, that is no substitute to a prompt service. I do not know what happened in the kitchen, but it took between 30 to 45 minutes waiting time, after we finished each course for the next one to arrive at the table. Even though we finished one course and crossed our flatware, none of the staff took the initiative to remove the plates. There were servers doing nothing just staring at the walls or talking to each other, paying no attention to the customers. We were waiting close to an hour for the dessert and I asked the waitress what was happening? Why such a delay? Then, the manager came and asked us to excuse them because the kitchen was a bit backlog At the end, we asked for the check, as my son was falling asleep of boredom, and left without dessert, at exactly 9:30 P. M. The Bocuse and The Caterina de’ Medici served the entire dinner and lunch for us in 1 hour 30 minutes with excellent food and impecable service. Do not waste your time with this one

I don’t usually rate restaurants, but I feel that I need to express our opinions on this one. We were very excited when I was able to get a Saturday evening reservation based upon the TA reviews. However, our takeaway at the end of the evening was not as great as we had anticipated. There were four of us dining and none of us were highly satisfied with our dinners. They were fine, but not superb like many reviews on this site had expressed. Our desserts for $12 each left A LOT to be desired. We felt that the students were trying very hard, but they were very nervous and not securely sure of themselves in the industry yet. We understand that this is a learning process at a restaurant of this nature, BUT we are also paying steep full prices for our meals including an added “20% schooling” gratuity. We are returning to Hyde Park in the Fall and I don’t think that we would return to try another culinary restaurant. There are too many other great restaurants along the river that offer experienced servers within a similar fine dining atmosphere.

Once again, American Bounty consistently dazzles us with superb food, excellent service and an ambiance that you can almost taste!!! As part of the CIA, all the service staff are students who are young, vibrant and eager to please (albeit sometimes a bit nervous). It is really rewarding to see these young people building their culinary skills to become the chefs of tomorrow. The food....simply amazing, both in taste and presentation. Crab cakes and corn soup were excellent appetizers. Shrimp & grits was amazingly presented, complete with andouille sausage. Lobster risotto was packed full of lobster meat on a deliciously creamy risotto. Banana ice cream and a decadent Inca chocolate cake topped off the meal. Service is included ('it's called student support charge') and you can add your own donation on top of that, which I always do, because these kids are simply amazing. Walk the CIA grounds after for a spectacular Hudson River view. A nice day overall.

This is our fourth time to American Bounty, as this is a tradition. Unlike previous visits, this one was somewhat disappointing. While the restaurant ambiance was lovely as always, much of the lunch experience fell somewhat short. Service was exceptionally friendly, but incredibly slow, and it took the waiter a long time to write down each menu choice. Both the appetizer and the main courses were initially delivered to the incorrect people at our table. Lamb meatballs were dry, but tasty; fig salad was excellent; quail was outstanding. As for main course, one of us received the incorrect fish (but he ate it anyway so as not to delay our already long luncheon). The shrimp and grits were overly spicy, including the grits, which I believe are there to temper down the spice. It overpowered the entire taste. Beef was cooked adequately as was the duck. Desserts were outstanding, but it took us a long time to get the check, even though the place was not crowded at all. Oh, and we heard something drop frequently...cutlery, dishes, trays, etc. We understand that these are students and that they try their very best to provide service, but it seems that their training fell short on all levels. I have no issue with the servers...they're doing their best. But the faculty and staff need to sharpen up their game and teach the finer points. Will we be back? Of course!!!

This is a nice "teaching" restaurant within the Culinary Institute. The décor is traditional and cozy, with a great deal of ambiance. The food was amazing. Pork belly starter was delicious as were the salads and crab cakes. Chicken cutlet, duck and lamb main courses were incredible both in taste and presentation. And dessert....well, we just couldn't decide so we each had a separate one (get the gingerbread sundae). Service was abundant, and we were well-attended by many slightly nervous but totally competent and friendly servers. This is a great experience that makes you feel good too.

You have to reserve as soon as reservations are available (about 6 weeks before you plan to be there). Is it worth all the advance planning? Absolutely. All the food is fabulous but what I remember best were the crabcakes. Portions are generous, unlike some fine dining experiences. I opted for student-crafted beer as opposed to wine that was not from the region. All the students have to do a rotation serving (as they should), so you might be someone's first customers. Having the CIA in addition to the FDR and Eleanor Roosevelt sites, and Vanderbilt mansion, makes Hyde Park a worthy destination.
