Every small town deserves an authentic wood-fired pizza place like Centro in Cedar City, Utah. We arrived on a crowded Sunday evening, but were fortunate to find a table on the sidewalk that was about to be vacated. We started with a huge salad of...spring greens (substituted for the usual arugula); we doubted we could finish it but the quality was so high that we did and liked every bite. We then opted for two pizzas that were well-executed with that signature wood-burnt crust. Both were magnum-tasty and satisfying, although we only finished half (all the better for having leftovers for lunch the next day on the road to Bryce Canyon National Park). We did have one small problem with service -- our male server who had been friendly and helpful throughout the evening, particularly with wine and cider suggestions, suddenly disappeared from view toward the end of our meal. After some anxious moments, we finally had to inquire about his whereabouts to get our check, which was remarkably modest for the quality of food and drink. Lastly, from one member of our couple party -- the mother of a master wood-fired pizza maker back in Washington State -- came a suggestion for those in the Centro kitchen: When adding the basil leaves to the popular margherita tomato-and-basil pizza, hold off and add them near the end of the oven process. That way they are not burned to a crisp and lose all basil flavor, as happened with hers. Centro is too close to perfection to continue making this little mistake.More
