When Project Pie opened I was thrilled, as they have a gluten free pizza which is delightful. We would go there for lunch often as it was fast, easy to figure out what you want to put on the pizza (individual) you ordered and consistent. THEN someone decided they needed to make more money. This is like many of the "new generation" pizza places...thin crust pizza that's flash baked within moments but they do a great job here! I started with a #7 and added some veggies that I spotted on the line.

As described by one of the guys behind the ordering counter, Project Pie is "The Subway of Pizza Parlors." We stumbled upon Project Pie after just arriving in town. It was a delicious stop. You can create your own pizza to your own liking. Definitely recommend!

It's a pizza version of Chipotle! You can either choose and "pre-built" pizza from the menu of make a custom one yourself. Plenty of different toppings to choose from and at a good price. Fast service and good atmosphere.

We stopped here for lunch and were very pleased. The prices were very reasonable and the pizza was quite yummy. The concept is very neat with the staff preparing your pizza as you watch.

A very interesting concept eatery with a build your own pizza idea. The pizzas are individual sized on a good thin crust that are made fresh right in front of you in their red hot oven. Surprisingly it only takes about 5 mins to bake from fresh dough and whatever ingredients you selected. The selection of toppings is extensive too.... More
