It might have being just a day off for the chef, but is hard to pardon than when you are paying top dollar and when the rest of the resort is flawless. we ate in the bar area, so hopefully our experience is not indicative of the restaurant itself. We had horrible service and average food. Habid, our server and bartender was inattentive at best. the bar was not busy, so i am not sure what his excuse was. we were very disappointed.

We went three times to Amaya whilst staying in the hotel. Two evening meals and one breakfast. We kept giving them benefit of the doubt, but in a hotel of this class it really should be better. This restaurant in the Fairmont features a wide variety of entrees for being an Italian restaurant. The tables and booths are placed to allow maximum privacy. The staff is prompt with service but do not linger. Really enjoyed the fresh fish and dessert.

Service was good, the room was well lit- not too bright and not too dark. Furnished niceley on the elegant side. All of the food was fresh and hot. Well made and delicious.

We were here for a special dinner and unfortunately, it was a big disappointment. It started when we reserved their big round table and it was not set up when we arrived. We stayed four nights at the Grand Del Mar Hotel and our only disappointment during that stay was their main dining room, Amaya. We had dinner there the first night.
