We really loved the choices we had delivered to the neighboring brewery, Archetype. The food was fresh and flavorful and the portion sizes were good. Well done!

First, get the Brussels sprouts! They are amazing. They have some kind of peanut sauce. I don’t know everything that was in them, but I wished that I weren’t sharing them with my husband. The vegetable red curry was warming and spicy but not over...the top hot. Perfect for a cold night. My 6 year old son can be picky about dinner but he loved the blacked chicken and rice kids dish. I added broccoli for him.More

My wife and I finally had an opportunity to try this restaurant last night and it does not disappoint! I had the spicy red vegetable curry and it is incredible the amount of flavor this dish has while not being overpowering. I’m a huge fan...of spicy, but I also like to make sure that I can taste all the other flavors and this knocked it out of the park. The coconut, lemon grass, and all other flavors blending together in such a creamy vegan sauce was amazing. I also tried the brussels sprouts and they were perfectly cooked as well. Crunchy on the outside and still chewy and tasty in the middle. Highly recommend!More

Cheap packet noodles in synthetic sauce - meat tasted decent but only a tiny amount, no vegetables included at all - each was priced extra-ridiculous on top of a $15 basic price. Even the egg was charged extra which is absurd for ramen. So, $15...for packet noodles from Dollar Tree and a small amount of meat. Do not waste your money.More

Gan Shan is excellent. West was my favorite location and it remains fantastic. Service is fast and everything on the menu (have had it all, pretty much) is great. The Charlotte St location had some options that were kinda off, but this one is solid....Absolutely love the rice bowl with tofu. The wings are always top notch and there are a lot of great healthy options. Not many places I'll spend $25 on myself for dinner but it's worth it. It's a small place but it's cute and turnover is fast so I have never had to wait, and I've been there many times. Any time I have a friend here who wants to try a good Asheville restaurant, it's the first Asian restaurant I suggest.More

Spicy beef Ramen + soft boiled egg + bok Choi.... I cannot stop eating this stuff. It’s so so so good. Just enough spice and all the flavor you could want. It took them about two years, but now it is perfect. At first it...was too salty, then too oily... now, perfection. It’s a lot of food, go hungry!More

Stopped in for lunch on a Friday early afternoon. Nice atmosphere and enjoyed the 24 hr pork ramen which was very good. Family members with me enjoyed the spicy beef ramen and cabbage wrap with pulled pork. All our selections were very good and the...staff were friendly.More

This was our second time here and we would not have been back if not for this is where our friends wanted to go. She is gluten free and can eat the rice bowls. The restaurant is pricey which is fine if the food is...commensurate. The food is ok but not great. For me, the main issue is I like my food to be hot and this is the second time the ramen was just warm. $45 for an order of dumplings and 2 bowls of ramen. Better options in Asheville.More

We really wanted to love this place. We are big fans of all sorts of Asian food and did not expect "authentic" but did expect deliciously hipster-ized version of mainstays such as ramen and bao. The "24 hour" pork ramen did not taste like it...had been prepared for anywhere near that length of time; the broth had zero funk and no dimension. The bao bun was cold and a little gummy, tasted pre-packaged more than house-made. First time in my life I have left bao on my plate uneaten. The spicy korean chicken wings were not well-crisped and also lacked dimension - really just two notes - spicy and sweet. Service was quick and friendly and the space is warm and cozy.More

I visited on two nights and got different dishes each night. The staff are friendly, and the chicken wings are great! The ramen ... not so much. The Spicy Beef Ramen had extra-fatty beef brisket and a strong, slightly burnt flavor. The Chicken Ramen had...no flavor at all. I think the problem with it was that they didn't use salt in the liquid in which they cooked the noodles and didn't brine (or salt) the chicken, and if you do that, it's almost impossible to get the flavor/richness that salt adds into the food. I added lots of tamari and some shakes of salt, and the flavor was still flat, the noodles tasteless. The other issue with the food was the lack of vegetables in the ramen (both of them). Using mushrooms or something else that could add umami might help, but adding some other things—carrots, for example—could add some depth and complexity that's missing now. The issue with the space is the temperature: It's chilly in the dining area, and customers in the small space were mostly wearing insulated jackets. The staff will raise the temperature if you ask, but I'd guess the folks dining in are self-selecting to those who are more cold tolerant than I am.More
