This was our favorite restaurant in Maui. We’ve dined at numerous Michelin star restaurants in California, and this food felt comparable. Owned by a very friendly couple, this restaurant offers a creative and delicious tasting menu. Even though it is expensive, my fiancé and I...thoroughly enjoyed the 3 hours we spent here. My husband and I are foodies. It was a delightful surprise to discover NyloS in Paia during our last visit to Maui. We prefer restaurants where the food is the star, not the decor. The dinner ,highlighting local ingredients , was cooked perfectly by the...chef , had some creative touches and was served in an impeccable manner by the chef's wife. The prix fixe menu was perfectly balanced with a risotto, then a meat dish and a crab side dish. The dessert was an excellent chocolate parfait. They accomadated my husband's allergy to shellfish by substituting at the last minute a local fish for the crab. The selection of wines was modest but appropriate. Every dish was served with great attention to details and at the right temperature. Finally the decor is very simple but we had crystal glasses, a white cotton tablecloth and napkins . When we left the chef bade us farewell and we thanked him for a superb meal and an extremely enjoyable evening. Although it was a little expensive we think this is the best restaurant in Maui and we certainly will be back on our next visit.I agree with another reviewer that this restaurant deserves one star Michelin.More

Most overrated restaurant that I have ever been to. Service was great, but food was so so. The chef could have a least dressed like a chef kind of sloppy and not well presented.what finished us off was when the chef doubled dipped checking the...flavor of one of his sauces on the stove. He was constantly wiping his forehead with his arm.More

We are foodies with my wife. While we like to try out fine dining once in a while, our heart is with bistro food & good wine. nyloS managed to merge the two beautifully. The couple who runs the place very sweet and nice people....As the place is small it feels like you are guests at their table at their home. Service was absolutely fantastic. The food was truly amazing, classic techniques together with high quality produce. The set menu was a well balanced journey and we left with broad happy smiles & full bellies. The wine list is broad with enough reasonably priced options available. We went with a nice white wine from France and the price-value was very good. I am not suprised that people say that this is the best place to eat in Maui. I concur. nyloS also offered to us one of the best ever fine dining experiences in the USA. I hope Michelin Inspector(s) would visit the place, I think nyloS is one star quality. Highly recommended!More

We had a great time! It was a unique experience in Maui to come to a small restaurant, probably about 30 seats, run by the chef and his wife, a very intimate atmosphere and great food and service. Not only does the chef have passion...and playfulness in his cooking, but he is incredibly skilled already and will even get better. This is a unique time in a chef's career where they are still inventive, taking risks and looking to really delight rather than playing it safe. Getting this many dishes out on time, with perfect temperature is not easy, and his wife was serving everyone and pouring wine, not easy and yet it felt like the whole thing flowed and in fact not having a bunch staff was refreshingly nice. The spacing of the dishes gave us time to enjoy our wine, relax and get ready for the next one. It was a prex-fixe menu for $165, it changes daily depending on what he makes. They do ask about dietary requirements. We started with a little bite of foie, caviar and something else that was so yummy, I only wished for more. The salty and sweet flavors were in perfect harmony. The next dish was a vegetable showcase, this one was probably my least favorite. I guess I don't like eating ingredients separately and while they were nicely prepared nothing really stood out for me in terms of flavor or preparation. For me, this dish looked better than it tasted. The next course was the bread, this was also a bit strange as bread is not really a course, it was good and all freshly made but I would not do this as a course, and will admit I usually skip the bread altogether. The lobster and truffle dish was so good, the lobster melted in my mouth, the sauces were nicely paired and delicate to not overpower the flavor. The dish felt light and fun. There was a very nice portion of ruffles on there. Great sourcing of both exotic and local ingredients. Then the steak, perfectly cooked, nice portion. The sides were a bit too much, I'm not sure they worked for me but everything tasted good. I think the kimchi threw me off since his dishes tend to be more French-inspired and somehow there was this separation on the plate, and I favor more cohesive dishes. The dessert was chocolate with some crispy rice, all I know is we pretty much licked our plates. I'm not usually a dessert person and this was very nicely done and showed his skill on both savory and sweets. What needs to be improved is the decor. Charging this kind of price and creating an experience is both done through food and ambiance and the decor was just generic posters, which felt like an afterthought.More

back in maui for the holidays, back at nylos. as before, the food is tasty, interesting, and beautifully presented. jeremy and paulina are warm, welcoming, easygoing hosts - the sort who remember you from previous visits and ask about your kids. the music is interesting...and just the right volume. nylos is, with state bird provisions in san francisco, one of our 2 favorite restaurants in the world.More

This small restaurant in Paia is deserving and worthy of a 5 star rating. Service is friendly and efficient. The atmosphere is relaxed and welcoming, has a good playlist, and chairs are cushioned and comfortable which is good because this is not a meal to...rush through. The amuse bouche and appetizers were unusual and delicious. My duck confit was the beautifully presented, crispy skin, rich and delicious. The foccacia bread and butter was outstanding. My husbands filet mignon was perfect. We didn’t love dessert as much as the preceding courses, the profiteroles were fine, just not to our taste. Maybe a choice would be a good idea. Special mention of the wine pairings which perfectly complimented the dishes they accompanied. If you want something else, there is an extensive list of new world/ old world wines available. If you are feeling spendy you can go for some fine French champagne. I would encourage anyone who likes to savour delicious tastings to support this great local eatery that sources ingredients from island farms and providers. You will not be disappointed. We’d definitely come back.More

The restaurant is small and intimate; it's essential to make a reservation. The atmosphere is warm and friendly. And the food is superb. By the way, parking is generally at a premium in that part of Maui, but there's plenty of parking in the two...lots across the road from nyloS.More

My husband and I had dinner at nyloS last night and the whole experience was wonderful from beginning to end. The space is small, intimate and simple. You can see the kitchen from your table and watch Jeremy as he creates the dishes throughout the...evening. As Jeremy or his wife bring out each dish they explain what you’re about to eat, where it was sourced etc. It adds to the overall experience. This is an experience that is meant to be savored and not rushed. If you appreciate great food, made by people who put a lot of thought into what they’re creating don’t miss nyloS.More
