Chef Driven: One thing we pride ourselves with is a great staff. We consider ourselves one big family. We have seen many of our employees start when they were 15 and grow up in the restaurant. We realize there is so much talent, passion and loyalty in our staff. Over the years, JR has learned new things, has had new ideas, and new styles that he has wanted to experiment with. Although, trying them on our customers at Chives Restaurant in Suamico was always ideal, it is difficult to change the menu when customers have grown to love certain signature items that we simply could not change. Bleu Restaurant and Lounge was an idea formed by JR Schoenfeld, and our son Nick Morse. The Chef: Bleu brings

We have been here twice. once in summer, we got to sit outside on the outdoor deck overlooking the ponds. The second time this winter, we sat inside. I noticed the ceiling was made of antique doors. Anything I have ordered here has been sublime....More

I had the special, pork schnitzel. It was so crunchy, had a wonderful sauce, and was the best I've ever tasted! I have never been disappointed with the food here!

This place is awesome - it is an experience! It's not a cheap date, but totally worth it. A great place to go with a small group for a fun event. Love the atmosphere!

Outstanding tenderloin with veggies that tasted just pulled from the ground! Could not have been more tender and the 7. Layer salad is a meal in itself! ( Complete with protein! )
