Food was well seasoned and hearty, but still a healthy option. The owner was very accommodating to vegan, vegetarian and gluten-free. Apple Cider Vinegar/Mustard Salad Dressing was fantastic.

Our party of three seeks out healthy options, and we were not disappointed on this our first visit. The menu generally offers soups (all homemade), salads (all dressings homemade), panini sandwiches, drinks including kombacha (brewed here). We had some of each. Chicken pot pie soup...was remarkable and alone worth a revisit. Salads had way-more-than-expected available toppings, and both of our salads were very good and totally fresh. The gluten free, vegan cheesecake was a delightful surprise as far as tasting really good in spite of being healthful. The day's menu is on a chalkboard, and diners order at the counter. The selection of soups increases as the week goes on. Loved our first experience. A bakery with gluten free options and nutrition-conscious goodies is to be added shortly, making this place a candidate for frequent stops. It's at a traffic light, so easy to find. Street parking. Princeton seems to be in a renewal... Bucha Bistro will definitely help that.More

I just ate at Bucha for the first time tonight, but I will definitely be going back! I had one of their panini's of the day, and it was amazing! The turkey was freshly cut, and the other toppings and flavors were unique and delicious....I also loved the atmosphere. It had a nice, relaxed bistro feel; perfect for a relatively quick and tasty meal.More

A new place in downtown Princeton across from the library. Fresh food. Excellent paninis, original and delicious soups, homemade bread. The house made pimento cheese with house made jalapeño jelly is delicious.
