We didn't have a reservation on a Saturday night but they managed to find us a table for 5 fairly quickly. The decor is very nice and the place has a great atmosphere. Food was excellent too. Highly recommend it.

We had a great dinner at Chimayo. It was highly recommended by hotel staff. Their twist on Mexican food was very unique and tasty. I was impressed with the duck enchilada. I highly recommend the visit.More

I enjoyed the cozy atmosphere, spinach salad and elk that came just as I ordered it - medium - but unfortunately the service for the large group that we had was uncomfortably slow, even with our limited menu. No doubt this would not apply under...More

My family has eaten at Chimayo a number of times over the years and each time I question my choice. Food is very very expensive, presentation is nice, but a chicken fajita for $42.00 in the summer and most main courses over $40.00 is high,...More

Chimayo did not disappoint from start to finish. Queso fundido to start along with their bread service was delicious. The elk London broil and veggie burrito both phenomenal. House margarita was good not great but the chocolate fondue for dessert was something to write home...More

Visited this restaurant with 8 other people from work for a business dinner. The waitstaff was fairly attentive and helpful, the food selection was wide and we all enjoyed our meals. They get a gold star for presentation on all fronts. We began with calamari,...More

Very disappointed given how highly recommended this restaurant was. I generally like rich food and had a pretty solid appetite after a day on the slopes. Their signature short rib dish wasn't tasty and was a beast to eat. Nothing about the menu justifies the...More

Description
Step through the door, and you’ll think you stepped across the border. Festive lighting, wrought iron detail, Southwestern throw pillows in each booth and an authentic Mexican tile floor create this fabulous illusion. Start with a signature Chimayo Margarita, a local’s favorite. Don’t miss the dipping sauce that’s served with the fresh baked bread. Favorites include the Crown Roast of Barbecue Spareribs with a chipotle and caramelized pineapple glaze served with buttermilk whipped potatoes and Dos Equis beer-battered onion rings. The Mexican Chocolate Fondue for four served with a tureen of melted espresso-cinnamon chocolate with dipping favorites of cinnamon sugar churros, peanut butter cookies, Mexican wedding cookies, banana, pineapple, and seasonal berries is sure to finish this delectable experience with a warm cozy feeling.
