Just north of San Antonio, at the edge of the Texas Hill Country, sits the small community of Leon Springs. Founded in the 1800s by Max Aue, Leon Spring's cityscape changed when Max's son, Rudolph, opened a one-stop gas station, garage, and grocery store. Bar-B-Q was added to the operation in 1989, and Rudy's "Country Store" and Bar-B-Q has been serving up tasty food ever since. The same original recipes that built Rudy's Leon Springs' reputation are now available throughout the Southwest. Our pits are 100% wood fired with oak, a slower burning wood than the mesquite used by others. Along with time and oak, we cook with a dry spice that ensures each plate of Rudy's Bar-B-Q is perfectly ready for you. Apply some of our famous "Sause" and dinner is served.

Delicious Pulled Pork

I'm not a huge fan of bbq flavored anything, but Rudy's pulled pork and flavored sauces are the best I've had in Waco. I got the Mac and cheese as a side, and that could be an entree by itself. I called ahead yesterday and spoke to manager Ian to let him know of our large family group converging at Rudy's from different parts of the state to celebrate a birthday. Everything was wonderful today...food was amazing, service was great, accessibility was easy for family member in a motorized wheelchair. Thanks Ian and Ethan and your staff for making our... More

The food is always great; love their chopped brisket-topped baked potatoes; ribs are very tasty; cafeteria type line service, so the wait time passes quickly.

I was on my way through town and remembered that Waco had a Rudy's. I went through the drive-in window and got a brisket sandwich, creamed corn, and potato salad. It was delicious. I had it with the sissy sauce. There creamed corn is absolutely delicious. Normally I also enjoy their turkey but had to go. Don't miss this place... More

Ate here twice in three days. BBQ brisket was moist and tender both times with wonderful and rich smokey taste. Sides were freshly made and complemented the beef. Can't get enough of this BBQ!

Loved the brisket. It had so much flavor that you didn't need the bbq sauce. Pulled pork didn't taste very good. The ribs were decent. I hate driving in that "circle".

They make, cut the meat, right when you order it. The sandwiches, bar-b-que, were great. Pick your drink, order your food, cary this to the table and consume. Paper towels on the wall and sauce on the table. Big tables so you may sit with others.
