A Triumph for the Executive Chef's brigade...SUPERB...7 Stars... We enjoyed three wonderful lunch and dinner visits to Island Brasserie. For our first dinner we experienced the best ever Wahoo fish... cooked to perfection. Restaurant is especially strong on steaks sourced from multiple top quality suppliers...in the USA with a terrific selection. It is one of those menus where it is hard to choose. The steak choices include the tomahawk, dry aged strip steaks, Wagyu beef and Chateaubriand amongst many, all supplied fresh...I was told that nothing is frozen...and it shows. The kitchen which serves Island Brasserie is probably Rosewood's main kitchen. They also had chefs tables going on inside, I took a peek and the substantial brigade of chefs were all going about their skills like a well rehearsed stage play, concentrating and producing the most superb dishes, some of which would not be out of place in a Michelin two star restaurant. With guests also dining in the kitchen, it really was a show. Our personal highlight was when we dined at the Chef's Garden table... without a doubt the nicest table to enjoy in the entire resort. We sat down to our chefs table dinner extravaganza on a Saturday night and so we got to enjoy the nearby 80s and 90s music night while we dined and stared at the stars. We had made a special request for the menu to have no shellfish, meat or poultry. Executive chef Gerry Adams personally presented the menu and told us the story behind every dish which was not only entertaining but greatly enhanced our enjoyment of this wonderful multi-course dinner. Chef Gerry Adams is the sort of guy who could turn around any major luxury hotel resort. The guy seems to be everywhere... he was popping up all over the resort issuing directions to chefs... but always calm, smiling and so totally in charge, while finding the time to introduce himself to guests and make them feel welcome. That is hospitality in action. As regards our astonishing, Chef's multi-course Garden Table dinner, each of the many different tastes were a delight. Some were from the main Island brasserie À la cart menu amongst which was the most astonishing Bermuda onion soup. This was an historic dinner which we enjoyed immensely but anybody can book it. If you don't manage to get a booking for this one off table you can order most of the dishes in the restaurant...or go for the chef's table in the kitchen. This was our meat and shellfish-free menu which came with a most enjoyable wine paring...and exceptional service: Chefs Garden Menu 'Memories' ...these were the amuse bouche... Childhood: Tomato Soup, Hot Buttered Toast (brilliant and it did remind me of childhood) Christmas: Cassava with Cranberry Chutney (glorious) Today: Wahoo Ceviche Grilled Peaches and Coconut (exceptional) Dinner:- James Tuckers Goats Cheese Creme Brule (this was one of the 'melt in the mouth,' definite Michelin standard dishes) Focaccia Asparagus ∞∞∞∞ Savory Profiterole (excellant) Beetroot Marie Rose Local Yellowfin Tuna (sublime) ∞∞∞∞ Bermuda Onion Soup (definite Michelin standard dish amongst other dishes this would not be out of place in a two Michelin star restaurant). It came with:- 'Textures of Onion' ∞∞∞∞ Rockfish Cheeks Black Garlic Mash Roasted Leeks Bearnaise (all delicious) ∞∞∞∞ Pan Roasted Wild Copper River Sockeye Salmon Asparagus and Artichoke Cannelloni Tomato Burrata Bream, Okra Tempura (superbly cooked) ∞∞∞∞ Chocolate Selection (off the scale...managed to find the room) The talent and effort involved in the kitchen to produce this first class cuisine is without a doubt unique in Bermuda to this Rosewood resort. The brigade of chefs at work has to be seen to be believed. Reminds me of walking into the kitchens at the better Michelin star restaurants. This dinner was a performance and we enjoyed every minute of it... Like a really great movie, we just did not want it to end. I did not manage to try the food at Sul Verde/golf club restaurant booked for our first night as our BA fight arrived late but everywhere else on the Rosewood resort provided great cuisine and usually a lovely surprise. For instance at the beach club restaurant I ordered a fish sandwich. What turned up was the most amazing turbot fish burger with all the trimmings along with exceptionally tasty French fries. With this we ordered new drink, described as a Pink Sand Spritz. I can best describe it as "Summer in a glass" ...Aperol, Chambord, St. Germain, Rose wine and soda water. Perfect. We enjoyed all of our breakfasts at the Island Brasserie... a great breakfast menu, beautifully cooked hot breakfasts as well as the most exceptional freshly squeezed orange juice. None of this could be achieved without a great deal of hard work, a highly talented food and beverage director and a brilliant executive chef in charge of a well trained, first class kitchen. Supporting all of this is lovely service, comfort and views to die for. We had the privilege of meeting executive chef Gerry Adams and his Number two, Gary... both massive talents. Gerry Adams oversees the culinary execution of every plate served throughout the resort ...and it shows. Every top-class luxury property needs to be led by a great team but few are. I discovered many years ago that a top-class Island resort stands or falls by the standards set by their executive chef. We used to stay at Sandy Lane hotel in Barbados and the standards went from being incredible... to being just okay, depending on the executive chef they managed to bring to the island. Many years ago my wife and I spent a week at a top resort in Antigua not knowing when we booked that it was situated right next to a swamp. It wasn't the dreadful mosquito problem which upset us the most, or the hideously out-of-tune grand piano that show their pianist pout up with...it was the dreadful standard of cuisine every single day in every restaurant. I ended up asking the general manager if they had an executive chef and he said, "of course we do." He was pulling the wool over my eyes as I later discovered that their executive chef had left nine months earlier and they had failed to replace him and as a result the standards had plummeted although the cost of being a guest remained the same. Rosewood clearly have an uncanny knack of attracting the very best executive chefs... and it shows. No matter how beautiful the property, and ROSEWOOD BERMUDA is gorgeous...no matter how good the service...and it is...no matter how well managed (and this entire hotel is managed to perfection, with fantastic attention to detail) the fact is that without a great F and B operation, the entire experience is open to chance, to hit and miss. What I loved about Rosewood Bermuda is that it is self-contained perfection... but if you do venture out there are good restaurants in this immaculate, well-kept, safe, sunny IslandMore

Never before have I eaten such a low quality roast dinner and for a 5 star establishment it was disgraceful. Four plates were served cold and two had to be returned twice to be warmed up. In a restaurant with about 10% capacity this is...completely unacceptable. As part of a larger party of 7 we felt compelled to not raise our concerns too obviously or vociferously and also a senior member of the party paid hence not wanting to cause offence. The cheese board was pathetic with about 5 stale dice sized portions. Drinks were forgotten. Food allergy questions had to be referred repeatedly to the kitchen. This should not happen at such a superior brand. Our dessert orders were taken at the start and were brought out to us as our first course. Only a hasty 180 degree turn saw them not arrive at our table. This is no doubt how my cheese was so dreadful. I’m sure you’ve lost a corporate client as a result of todays performance and this was by far the worst and only disappointing dining experience in Bermuda I’ve had out of 5 to date.More

A few weeks ago, I had the pleasurable experience of dining at Island Brasserie. The staff were personable, attentive and knowledgeable of their menus and the nightly specials. My appetizer choice was the local fresh fish catch of the day served as a tartare, topped...with an avocado guacamole, delicately dressed with crunchy toppings and a hint of chili peppers. For my entrée, I chose the grilled Loch Duarte Scottish salmon, accompanied with a lemon butter sauce served on the side; sand baked Bermuda carrots and broccolini with chili and garlic. I savored every bite and a lovely glass of Mercier Champagne completed the meal. Next came dessert, a long awaited and anticipated banana soufflé with vanilla sauce. It did not disappoint! Chef Gerry Adams and his team never fail to please. The wait staff are also on point and are always professional and efficient without being annoying. As a solo diner, this restaurant is one of my favorites. I wholehearted recommend it and cannot wait until my next meal at this first class establishment.More

We had a very nice time at Island Brasserie. The hotel it is in is quite sophisticated and understated at the same time. The choices ranged quite a bit so most diner's tastes can be met with something they will like. Quality of our meals...was very good. Oysters were delicious. Our server was very personable and when we questioned the special - which was catfish he responded by saying he personally guaranteed it. None of us ordered it but his guarantee did make me consider it!More

While we stayed at another resort this trip, we were compelled to visit the Rosewood and enjoy the wonderful ambiance, friendly and knowledgeable service and amazing food and drinks. Leave a little extra time before or after to visit the Gin room, where the creative...drinks and atmosphere compete mightily for best in show. We chose the Island Brasserie steakhouse for dinner and it exceeded expectations. Everyone in our party was blown away from the beginning with a unique complimentary pumpkin soup, followed by delicious entrees. Our table enjoyed a tremendously tender chateaubriand for 2 complete with green beans, creamed spinach and sautéed potatoes, flavorful curry salmon, shrimp pasta and a creative, mouth watering take on onion soup. The music by the pool was a very nice touch.More

Thanks Rosewood team for making our wedding day special. The day we decided and selected a venue for our wedding day we knew that the place would not disappoint us and we proved correct. Katie (The events manager is the best in the business). The...whole event flow, requirements were planned perfectly. The dining room ambiance and service was top notch. The amuse bouche was surprising. The highlight of the evening was when our experience curator prepared Caesar Salad on a trolley next to the table. Rockfish entree was the best. Our wedding cake was exactly the way we asked for. Asian curry was outstanding too. We will definitely visit again. Thanks.More

My family and I dined here last night. We waited over an hour and 15 mins for our meal. I’m sorry but that is just too long. I had a salad with chicken. The chicken was cold. I didn’t want to send it back for...fear I would wait forever. My son ordered the 45oz Tomahawk steak. He ordered med rare it came out rare. Another 15 mins later he waited for it to be recooked. We were all finished by then. My daughter had the vegetarian pasta. She said it was very good. Overall the wait time is just too long. There were others complaining as they waited too long as well. The staff was very friendly.More

I recently had a Great experience here with a couple of girlfriends during restaurant week. The service was attentive and the setting comfortable. What really elevated the evening was the food and how creative and delicious everything was! Chef Jerry came by our table to...greet us and we could not stop telling him how absolutely amazing every single dish was. I hadn’t been here in years and I don’t know why, I’ll be going back soon for sure!More

Me we’re staying on property and decided to try this restaurant. The food and service were both top notch! The dinning room it self was classic, and beautiful with the use of old murals. Definitely don’t miss this restaurant when visiting!

We did dinner on a Sunday night at Island Brasserie Rosewood, the restaurant was quiet due to "winter season" and the last day of the weekend, however we had a nice evening, food was tasty with a nice presentation. We tried the local goat cheese...souffle and share a Chateaubriand for 2. Wabi our server was very professional with a sense humor that we appreciated. Service was as a 5* Hotel, we recommend it!More

We were disappointed with our late launch here. I had the calamari, which was pretty flavorless. My husband had the tuna tartar which didn’t have much flavor either and he described it as mediocre. My mom liked her grilled shrimp, but I had one and...it tasted like shrimp cocktail (overcooked). My dad had the Bermuda chowder which he said was delicious! The service was fantastic as was the wine selection. I would expect more from a Rosewood. Maybe my expectations were too high.More

This place is one of the main reasons we don’t fuss about having to dine out and leave the resort. The food here is always spot on. Their menu is innovative and delicious. This is not a coffee house, or café! While the Rosewood Bermuda uses the island brasserie as their breakfast and lunch and dinner restaurant it’s actually so much more than the normal coffee house that you find in a hotel, and, The Rosewood is not...your run-of-the-mill hotel...it’s the best Bermuda has to offer. The buffet for breakfast is quite extensive, we had it numerous times each day choosing options from make your own omelettes to the fresh fruit and granola...You can choose between a continental buffet OR, a warm entrée buffet depending on how hungry you are. While not inexpensive it’s very high-quality! Plus the view is fantastic and the staff genuinely happy and engaged!More
