1794 The Whiskey Rebellion is a sustainable local downtown Carlisle restaurant which prides itself in sourcing the most eco-friendly products from an array of local farmers and distillers. The restaurant features over 50 American and International Whiskeys and an extensive craft drink list using no artificial sweeteners or mixes. All of our steaks are cooked on an open wood fired grill.

My buddy and I have tried multiple restaurants in Carlisle and I must say, Whiskey Rebellion is by far some of the best food we have ever had. It will now be our weekly Thursday dinner spot. We have gone twice now and Patti has...taken care of us both times. As a server/bartender myself, Patti is top notch when it comes to service and added so much positivity to two already positive experiences. Keep up the great work 1794 and Patti! -BillyMore

As my first review during COVID-19, I feel it necessary to mention that the patio is perfect for social distance dinners. I am on a road trip and stopped in Carlisle for the night. My bed-and-breakfast recommended this restaurant, and it did not disappoint. I...had the trout which was delicious. My waitress was the pastry chef and recommended dessert which I could not turn down. The prices are reasonable, the food is quality, and their patio is heated and well ventilated. The staff all were wearing masks and gloves, not to mention friendly, What else can you ask for during a pandemic!More

We passed through Carlisle with regularity pre-Covid. We returned recently to discover that a new chef, Cory, was in charge. In the past, our dietary preferences were accommodated wonderfully. Tonight, we were surprised and pleased by Cory’s effort. Patti, our server, was helpful and patient....If you are vegan, make a stop. It is worth it.More

Possibly the best meal we have had in quite some time. Our server, Samantha was phenomenal. She went out of her way to make our visit enjoyable and memorable. The whiskey rings are unbelievable and the crabcake is the best crabcake I have ever had....Very reasonable prices for delicious food. And try the skillet cookie. You won't regret it.More

I’m serious. Don’t miss this place. My boyfriend and I were spending a weekend in Carlisle for a wedding, and needed a place to go Friday night for a good (and late) dinner. I was immediately drawn to 1794 as it had amazing reviews and...an awesome name. We were completely blown away by our time there. We arrived and were greeted by a super friendly hostess who led us right to our table. We were immediately told the specials and couldn’t help but choose the drink of the night (a warmed alcoholic cider, a MUST try). The menu is small but perfect, offering amazing food at a completely reasonable price. Our waitress was outstanding and super friendly, which only amplified our experience. I got the Bastille Medallions, which were soft, delicious and perfectly paired with my Hassleback potato. My boyfriend got Molly’s Burger, which he could not stop raving about, as well as Molly’s pretzel twist which was delicious and served with a great cheese sauce. Our drinks were great, the restaurant was clean and neat and we agreed we’d have to try to bring our friends back for it. Don’t miss this spot when stopping in Carlisle!!!More

Mary was an amazing server and seriously the best food we ever had! Will definitely be back soon! Best place to eat in Carlisle!!!!! I don’t even like steak but I tried a bite of my partners and it is amazing!!

What an awesome experience at 1794! Sam our server was the sweetest thing. She was prompt, polite, and honest with us - excellent recommendation on dessert choices! Seriously - couldn't ask for a better experience. To top it all off - the food was absolutely...fantastic. Started with drinks - smoked old fashioned and amaretto on the rocks (was pleasantly surprised to find Disaronno on their rail). Beef Medallions and Chicken Pot Pie did not disappoint. Ended with an Apple Dumpling that was simply scrumpcious. We can't wait for a return trip to enjoy the food - atmosphere - and tasty drinks! Guess we need to comment on the prices - good value for the quality and atmosphere.More

We are from out of town and this is definitely a place you want to visit if you are ever in Carlisle Pa. this place is phenomenal. Excellent atmosphere, perfect staff, top notch bartender. The manager and our waitress were very attentive and knowledgable. My...husband and I recommend the wagyu steak with whiskey rings, you will not regret it!! The drinks were on point and prices were very reasonable especially with the excellent service! We will definitely be back tomorrow night!More

First visit of many for my wife and I. Not a lot of places with cooks that know what they're doing that are this affordable. Huge thanks to Samantha for being our guide on this culinary adventure. All fresh, local food and cooked 100% to...order. May take a little bit for the food to get there but boy is it worth the wait!More

Hi! I came to this restaurant yesterday and I loved the atmosphere and the food. Mary, my server, did a FANTASTIC job taking care of me, she really knew her stuff and was very hospitable. I will definitely be coming back !!! Great job!
