They definitely do have gluten free and vegan choices. We have one gluten free family member and three vegetarians. Our grandson had just graduated from Cornell and is vegan, he ate there all the time.

What I can tell you is that a table for 8 of us was set up ahead of time. However, because I did not make the plans to eat here, I am not sure that making reservations is a standard policy. Most often in Ithaca, a 'call ahead' policy is most common. If you call ahead one hour in advance, restaurants will do their best to 'reserve' table space.
