Chef Damon Baehrel is AMAZING. He is truly a GENIUS when it comes to the concept of 'farm-to-table.' The father of Native Harvest Cuisine, if you are fortunate enough to come to this wonderful gem of a restaurant in upstate New York, you are in for a unique dining experience that can only be experienced personally! Every single item on... More

I can't believe that I forgot to review this restaurant. We have dined there twice and both times were memorable. If you're looking for the ultimate dining experience, this is it. Chef Baehrel started the farm to table movement years ago, before it was fashionable. The Chef also functions as the sommelier, the waiter and the busboy. He explains the... More

In a tiny town in a big forest near Albany sits this culinary treasure. Damon Baehrel forages all of the vegetables, flowers and herbs from the 12 acre woods surrounding his house - restaurant. Many of the "sauces" are made from oils and sap that have been maturing for days, weeks, months or even years. Our 20+ courses had over... More

My wife and I lived in New York city and travelled around the world, so who would have thought the finest meal we would ever enjoy would be at a restaurant just a couple of edits north on the New York State thruway from our home in woodstock. Damon himself is passionate about his craft. The 15-20 courses he creates... More

The Gastronomy of Trust – Damon Baehrel at the Basement Bistro – Earlton, NY As diners, we often forget the trust that we place in those who prepare and serve us sustenance. But on occasion this rises to the surface when we choose to dine in an especially “authentic” (read: dirty) ethnic restaurant. On other occasions this may be linked... More

It has been a long time since I have been here. It was called the Basement Bistro. It was my 50 th Bday. We had great great food and a fun fun time. Haven't been since and I hope one day to be able to return.

This was by far the most amazing meal I have ever experienced. I have NEVER met anyone with such passion and excitement and energy. This was truly a once in a lifetime 6 hour dinner that could never be duplicated. It was heartwarming to see Damon so appreciative for our visit so that he can continue to do what he... More

I am writing this review after visiting Damon's website and seeing that he is not taking reservations until this Spring. My wife and I have experienced Damon's cuisine and show 3 times over the previous 4 years. I call it a show because of the effort he takes to explain every course, ingredients, source and preparation. The quality of every... More

We had the pleasure of dining at Damon Baehrel this past week. We had been on the reservation request list for over 2 years and were accommodated with a private seating for 4 on a day he is normally closed. 23 courses over 6 hours with the wines selected and paired by Chef Damon. It was by far the best... More

No matter how much you think this restaurant might be overhyped, you will realise when you get there that it is not enough compared to what it deserves. This restaurant is truly an experience. It explores realms of taste that are completely unknown; it is absolutely unique in its conception. It is adventurous beyond the realm of comprehension, and yet... More

Description
Since 1989,DAMON BAEHREL has worked completely alone at his home, which is where his small, handbuilt, 20 seat restaurant & 12 acre property/farm, that is the only source of ingredients for his original NATIVE HARVEST CUISINE, is located. Having no suppliers, Damon also creates all of the flours, fresh pressed oils, cheeses, pineneedle cured meats and vinegars from cultivated & native ingredients found on the property.
