Chimborazo is easily our favourite local eatery and we visit at least twice a month. Servings are generous, the food is delightful, and the setting is comfortable. My wife and I love this place. The roast pork is a favorite, either for dinner or in a sandwich,. Fish or shrimp encocado is also very good. . The green sauce for the pork is wonderful,

This is a small Ecuadorian restaurant which does not take reservations. The food is very fresh tasting, with surprisingly flavorful from what I had heard about Ecuadorian food. There are several vegetarian options. We tried 3 appetizers, all of which were delicious. The tres leches cake was wonderful.

This place has an awesome, comfortable vibe. Portions are great, prices are reasonable, staff is friendly. Everything tasted good. Only bummer was that half of our pork was dry and over-cooked while the other half was perfect.

You want this place to succeed. The menu is so much different than other Latin American places. The prices are great and the wait staff was fantastic. It's small and you may drive past it but it's worth turning back for.

I went to Chimborazo on a weekend trip to the Twin Cities with virtually NO experience with Ecuadorian food, but it instantly became one of my favorite cuisines after one meal at this restaurant. This is a tiny little restaurant that is a hush secret, but because so many people have enjoyed this food I really recommend going on a Monday night when nobody thinks they're open. Full disclosure: I don't know anything about Ecuadorian food, but this is definitely a great place for a great meal. From the first week this restaurant opened it has been in our top 3. It is unassuming in decor and comfortable. The food is esquisite! I recommend their pulled pork sandwich and yucca fritta for a quick delicious lunch. The "green sauce" is extra special. Go ahead and order more on the side. You're going to want to have it.... Loved the Empanada & Encocado. Saltado was ok. Didn't care for Yuca Frita (it tasted like stale fries). Recommend it!
