The proprietor and owner of “M” comes from a small town in south eastern Kentucky. She learned the fine art of Southern cooking from her family which ran a top rated restaurant in Southeastern Kentucky, as well as a second restaurant in central Kentucky. She grew up enjoying the finest food and was schooled in the art of Southern cooking. She also learned and became a connoisseur of fine bourbons, which shows in the finest collection of bourbon in the northern suburbs of Chicago.“M” not only has one of the best selections of Bourbon, but also an excellent selection of wine, Champaign, spirits and beer. When She moved to the Chicago-land area, she wanted to do something which reminded her and connected her to home and her roots. After years of contemplation and thought, she finally opened her restaurant “M” in down town Highland Park, IL. Bio: Chef Brian GreeneBrian Greene, Executive Chef, hails from Tecumseh MI, where he participated in the renovation of Evans Street Station under Chef Kelly Johnson. Brian’s formal culinary schooling is from the Pennsylvania Culinary Institute in Pittsburgh. His first sous position was with Chef Villegas (from the Michigan cooking show Fork In The Road) at Restaurant Villegas in MI. Brian was part of the opening crew for Tramontos Steak & Seafood in Wheeling under Chef/Owner Rick Tramanto. After three years at Tramontos Brian made his way into the kitchen of Chef Michael Paulsen of Abigails American Bistro in Highland Park. After Abigails came the Purple Pig in downtown Chicago where Brian spent his time honing his culinary skills doing head to tail swine cookery. When Brian learned that M was looking for an executive chef he was there ready to take on the job. Brian has put together a bountiful menu using the freshest ingredients that the seasons have to offer. “We want every bite of food you take at M to evoke a childhood memory, or to create a brand new sensory experience. “ We hope you will come and enjoy some of the excellent food, wine, Bourbon and down home hospitality.
