It is trendy to say that you are getting your culinary inspiration from the traditional dishes and local ingredients, but not many chefs in Slovenia are as dedicated to it as is Meta Repovž and even the most media-exposed chefs in Slovenia should learn from...her. The place itself kept the charm of a countryside inn. It was not created by an architect, but by decades of family tradition. If you like fancy places, you will probably be disappointed, but if you are all about great food, Repovž will charm you. The dishes in their tasting menus change frequently; therefore, recommending a particular dish does not make a sense. But for an illustration of what you can expect, let me describe a few most memorable dishes of our dinner. They were served on a whimsical mix of modern, minimalistic plates and straight-of-the-flea-market dishes that reminded us of meals at our grandparents long time ago. The selection of appetizers was excellent; they were a feast of flavors and textures and a testimony to how Repovž is using local ingredients. A simple potato salad with chanterelles was converted to a culinary masterpiece, homemade cold cuts were exquisite, and we would gladly return just to have some more lamb sweetbreads and liver with turnip. The winner of the evening was a fritter made of aged sheep cheese. It was accompanied by a crisp made of the same cheese, sheep yoghurt with lovage, and mushrooms. A minimalistic plating of a dish that was oh so complex in taste. Heavy notes of fried cheese were masterfully lightened by the yoghurt, lovage providing additional freshness and complexity. Repovž doesn't do things to put them in a baroque description of the dish (there is no menu anyway), but because they feel how it should be done. They are humble in presenting themselves with words. Instead, the plates tell the story of a great chef. We were curious about what would beef soup, a golden standard of Slovenian Sunday lunches, bring. The chef wandered away from Šentjanž into the world with this one. Spices were suggesting an influence of Vietnamese pho, miso and poached egg reminded us of ramen, while a slice of raw beef was shabu-shabu-like. It could be a hotchpotch, but it was anything but that. A perfect blend of local and global, perfectly matched flavors, kudos to the chef! Lamb offal has already been explored, but repeating the theme didn't bother us. The "deaf" štrukelj (yeasted dough, cooked in a steamer), a typical dish of the region, was made of spelt flour coming from Repovž own farm, it was filled with nicely spiced meat, and converted from its standard role of a side dish into a nice main dish. If you have a chance (and you should take time to really enjoy Repovž), stay there over the night. Not just because of rooms with a great view to the nature, but because of a royal breakfast that is included in the stay. Repovž is a rare jewel and it has to be discovered over and over again.More

Repovž has justly been Michelin awarded. As a part of JRE was well known not only in Slovenia for a longer period. Though not really easy accessible, it’s location in the core of Dolenjska offers a travel a countryside that is excellent entry point to...local but very much upgraded local cuisine. One expect a selection of surprises with professinal but warmhearted waiters, so I can only say: very nice experience. But then local wines are really a surprise. I am quite well into Slovenian wines, but I did not know there are so many exqusit wine producers in this region.More

We tried six-course tasting menu. They serve authentic, local food (locally-produced and organic food). Every single dish was delicious. On their page, they say 'Harmony of flavours' and they don't lie. Service was not just nice, but excellent, professional. The whole experience was amazing.

We just got first Michelin Stars in Slovenia this week. And they made a brilliant mistake. This place is Michelin star for sure. And way better than at least 2 restaurants that got them. But why brilliant mistake? Simple when looking from positive, selfish side...- people will not know for this hidden heaven so we will get spoiled in peace by outstanding coulinary magic and pristine smiles from family Repovz. My compliments to you, Repovz team!More
