We discovered Jim’s years ago and as a foodie, I was immediately in love. The pulled pork was my go-to for many trips. Tender, lean and SMOKEY!!! Then one day I went with a group who were all getting the ribs. I never was much...of a “rib person” with just occasionally getting ribs from Sonny’s or Rib Country. So anyway, as I was thoroughly enjoying my pulled pork one of the friends shoved a rib on my plate, insisting that I try it. I bit into that meaty, tender, juicy and SMOKEY, SMOKEY, SMOKEY… rib and… son, I thought I’d died and gone to heaven! As soon as possible a week or so later we returned and I anxiously waited in line, hoping they wouldn’t run out before my turn, and finally ordered my own personal half-rack of heaven. (Note that Jim’s half-rack is like a full rack at some other places). Thereafter, we continued to go whenever we were in the area. When we heard Jim was selling out it was a bitter blow but we kept going and it seemed for a while that nothing had changed. THEN… we began to note that the wonderful infusion of smoke in the ribs was disappearing. The ribs were still meaty, tender and juicy BUT, most of that wonderful smoke flavor was gone. Used to be that when you left Jim’s, your fingers kept that Smokey fragrance for a long time, reminding you of the wonderful culinary experience. Alas, those times seem to be gone as you can now actually wash it away with soap and water. So, nowadays we still go there but I’m mostly back on pulled pork with only an occasional rib order just to reminisce, whimper, sniff… on just how truly wonderfully SMOKEY they used to be.More
