We have enjoyed in the past the food and presentation but it seems since his foray into James Beard experience its become a exercise in presentation. The small plates which were always our favorites have become plate paintings with most of the plate empty and food minimally placed to be a graphic element. This is what happens when the chefs... This is a wonderful place in the heart of downtown. Innovative, creative dishes that are light and delicious. Portions are adequate, but not overwhelming. Service was excellent and quick. I would definitely go again.

We ordered the chef's special 5 course menu and each course was really good and innovative in its presentation. I would highly recommend this restaurant, it is definitely one of the best in Steamboat. Service was top notch.

The decor is modern, attractive, cool and classy all at the same time. The menu items and described preparations are stunning. The food was plenty tasty as well, but the shortfall was in the value. bistro cv is not just a good restaurant in steamboat springs, its a top restaurant anywhere, and not too expensive. we were there unexpectedly with six family members because of a cancelled flight and could not believe our good luck. the menu has an imaginative menu of small medium and regular plates, all with fresh, good, but not too many... Food, atmosphere and service were all excellent! The appetizers (yellowtail, asparagus salad and grilled romaine) were the highlights. The pork 3 ways was overlooked and dry, but the steak was excellent and cooked perfectly. Also heard the scallops were delicious. Service was also good. Will definitely try again next visit.

I am fortunate to have this lovely bistro nearby. The service is generally very good, and the food is beautifully presented. Happy Hour is a good value, and sitting at the chefs' bar makes it ok for going solo.

The menu is creative and the dishes well presented and exquisite in taste. We had the tasting menu and wine pairings. Do not go if you judge restaurants on size of portions; this is the wrong place for you.
