We stopped in at this just-off-the-highway spot on a drive home from a camping trip, and were pleasantly surprised by how nicely 'downtown' the location felt. Solar Roast is notable for several reasons. They actually do sun-roast their coffee on the roof of the building. Food is healthy and inexpensive, and somehow they have managed to find help (young ladies) who are always upbeat, courteous, and efficient. No barristers with elitist attitudes (as in some coffee houses), but just plain nice, pleasant people to wait on... More

When we drove into Pueblo from the Interstate we thought the town had died. There were very few people about despite it being lunchtime on a Friday and many of the shops were vacant or closed. We drove past Solar Roast twice before realising it was there and we were pleased to find a café that served its own coffee... More

In all my visits to Pueblo I'd never seen this place. It is very easy to miss. I ordered a peppermint latte and it was tasty. The staff was friendly. They have nice seating inside & tables outside. While they made my drink I saw food at tables that looked really good. I'll be back and do breakfast next trip.

This is a local spot and easy to miss. It is filled with regulars and first time visitors the same. The coffee is fresh, roasted on site through solar power, and wins awards after awards. The food is fresh and large portions.

When you want more than the average coffee in the free hotel buffets, this is the place to go! I gather they roast their own beans (using solar power). Great coffee to go or eat in with a breakfast sandwich. I stopped in every morning during a tennis tournament we were in town for.

I have visited this coffeehouse quite a few times. Good coffee, of course, and a better food selection than many coffeehouses. Unfortunately, they like to clean the bathrooms with ammonia and they use it liberally. You're sitting in the dining room and then you begin to realize that that sick, headachey feeling is coming from the ammonia fumes.

Thanksgiving and much of the historic old downtown of Pueblo is closed. Sadly too much of it, like the hearts of other old towns, is losing businesses to the big boxes and malls. There are some inspired businesses that are restoring the pleasing architecture and there is hope. Solar is an oasis for good coffee, light meals and friendly people.... More

Nice place to hang out with a cuppa and pastry or bagel sandwich. Kinda hipster but only vaguely as this is a Pueblo venue.
