I have really, really tried to like this place. It was my fourth visit in about that many years, and each time has gotten worse. Portions are small, when the food does come it's cold, service is so slow and delivered without any joy whatsoever,...More

It is not possible that this review is from an actual customer experience. It is made up by someone in an attempt to defame our brand.

We really enjoy coming here. The dishes are very special, really well presented, and the atmosphere is unhurried, relaxed and cordial. This is our only "go to" restaurant in Evergreen. The wine selections have been excellent.

Had a lower priced menu last few times we were there. This time, back to the very expensive menu. Had diver scallops, disappointed. (3 small scallops for $36!) Value to dish ratio: I thought it was not exciting taste-wise, way overpriced. Won't be back till...More

We wanted to go back here for supper but couldn't find the time, the four of us ordered different meals and they were all good. They have a big selection and ask to see both menus, you'll see what I mean.

Terrible... Ordered a spinach quesadilla and it was dripping in butter and foul tasting. The too thick tortilla burst. Have not been to the restaurant... They change their menu too often.More

You have not provided a review on our restaurant. Your review here is on our food truck. The spinach quesadilla also has mushrooms and goat cheese in it. Perhaps the "off flavor" you detected was from the goat cheese or the mushrooms. If you were...More

We decided to try a new restaurant over President's Day weekend. We opted for Bistro Colorado and were not disappointed. We both tried one of their fish entrees. My salmon was cooked to perfection and the sauce was delicious. Nice wine selection as well. Our...More

The elegance of the food and wine makes it feel like there would be a dress code, but this is Evergreen and Mountain Casual rules the day. No dress code, just a lovely meal.

Winner of "Best Menu" and "Most Unique Menu" at Taste of Colorado in 2016. Bistro Colorado (BICO) is a farm to table chef driven concept where the cuisine is inspired by sustainable and locally procured ingredients when available and classical, time proven culinary technique. Our menu changes seasonally. We focus on fresh, vibrant dishes in the spring and summer and more hearty fare during the fall and winter months. We feature all natural whole food plant based and allergen friendly options.
