Best Burrito's around. A cut above Chipotle and QDoba! Also the fish taco's were very good. The restaurant is like a Chipotle or QDoba. Grab a quick bite or get it to go.

Grabbed lunch for 12 after spending a morning on Dillon Lake. The chile rellenos and fish tacos were a pleasant surprise, and the servers were very friendly.

The food resembles Mexican food, but the staff is more like what I've seen at Illegal Pete's in Boulder (young white stoners). The staff was friendly though and the value was very good for a resort town dinner. The fish burrito was HUGE, delicious, and messy. The fish tacos looked very good as well, but I did not try them.... More

Stopped here to avoid eating fast food and to take a break from traffic. The popular fish tacos were pretty awesome and the staff was super friendly. The tacos are very filling. The fish is friend In a light batter that's not greasy. I will definitely stop here again.

Loved the Baja Fish tacos; got them on flour tortillas. Great flavor, quick to go thru serving line. One negative was we wanted a few chips & the only way served was for $5 you get small basket with guacamole & pico. Don't bother, chips fair & way to salty; guacamole & pico very good. Definitely go back!

We always come here for a lunch while in Dillon. Excellent tacos and burritos! The Shrimp Burrito is to die for! Everything here is fresh, and there are lots of options to cover your taste bud desires!

Chimayo scares people a bit. It is stuck in the shopping center and every local ski bum works there and eats there. But the food is worth it and the employees entertaining. I have even seen them drinking out of the frozen margarita machine while serving fish tacos to the retired local couple in the line in front of me.... More

I don't hate chains, but if an independent does it just as good I will choose them. Chimayo doesn't do it just as well, they do it better. I had the Baja fish burrito and the wife had 3 fish tacos. I dined at this restaurant twice over the weekend and both times I enjoyed the taste of the food. I went twice bc the group I was with liked it. The bad parts are the lack of cleanliness and both evening I had an upset stomach.
