A great find for the gluten-free person, and those without any food restrictions too. Reasonably priced food, great hosts, you will not be disappointed.

Found this Cafe ProFusion on TripAdvisor and my daughter is a vegetarian. We tried to get a table on Friday night at 6:15 before catching a movie, but they were full with a short wait (there are only 11 tables, inside and on the deck), so we went back on Saturday. The staff is welcoming, including the owners who keep hands-on. The restaurant itself is cramped, noisy, less than comfortable. Best braised short ribs ever, reasonable cost too..approx 25...you must try this place...fusion for sure...some vegetarian and gluten free choices...small...friendly...the couple that own it came to Dillon from San Fran...hubby chef has been perfecting the marinate and glaze for years...

The food is amazing. The space is small with about 5 tables inside. A few outside in the summer. The owners are there all the time and are hard workers. It's my go to place when in dillon looking for good food. Love the hot and sour soup.

Pros: As a Celiac finding Cafe Profusion has made my post-ski/kayak commute worth doing. Not only is the food delicious, but the service is incredible. Cafe Profusion is such a gourmet find in a Colorado Mountain Town. We dined in August 2015 and could not believe how delicious and fresh the food was. We are a little gourmet hole in the wall, located on the mezzanine of 119 East La Bonte. One block up from the amphitheater, we are currently serving lunch and dinner Wednesday through Saturday
