The staff is welcoming, including the owners who keep hands-on. The restaurant itself is cramped, noisy, less than comfortable. Best braised short ribs ever, reasonable cost too..approx 25...you must try this place...fusion for sure...some vegetarian and gluten free choices...small...friendly...the couple that own it came to Dillon from San Fran...hubby chef has been perfecting the marinate and glaze for years...

The food is amazing. The space is small with about 5 tables inside. A few outside in the summer. The owners are there all the time and are hard workers. It's my go to place when in dillon looking for good food. Love the hot and sour soup.

Pros: As a Celiac finding Cafe Profusion has made my post-ski/kayak commute worth doing. Not only is the food delicious, but the service is incredible. Cafe Profusion is such a gourmet find in a Colorado Mountain Town. We dined in August 2015 and could not believe how delicious and fresh the food was. We have eaten all over the US and this was a unique experience. First, the food was mostly vegan. YEAH!!! 2nd- the tastes were complex and at times simple. Cannot say enough good things about this place. Very small but so worth the stop. Not impressive exterior but, "oh the food and the owners".
